Perhaps you know, here in Japan, melon pan is baked with a cookie dough on the outside. This helps with the "crunchiness" of the top and supports the crisscross pattern. PS: good to see Theo again...

My husband and I are definitely going to try Aki when we are in Paris next year! We have only had mochi in California and Japan, so it will be fun to try it there! Also, my husband’s relatives have a Japanese restaurant in Los Angeles called Aki Restaurant! 😊 Great video!

You're right! Rice flour gives such a delicate and light texture-especially in traditional East Asian pastries. It’s one of the reasons those mochi-style cakes and treats feel so different from what we’re used to with wheat flour. Love hearing your perspective on the difference!
