Delicious Zucchini Bread plus freezing

Snickerdoodle zuchinni Bread
1 cup oul
3 eggs
1 1/4 cups granulated white sugar
2 teaspoons vanilla extract
3 cups all-purpose flour
2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon cream of tartar
1 teaspoon salt
2 cups grated zucchini
Mix together in small bowl for filling and top:
1/2 cup granulated white sugar
1 teaspoon cinnamon
1/4 teaspoon cream of tartar
Preheat oven to 350F. Coat two 9x5 loaf pans with cooking spray
In a large bowl, beat oil, eggs, sugar, and vanilla until well combined.
Add the dry ingredients and spices until everything is mixed and no dry patches fold the zucchini into the batter and until everything is combined
Fill 1/3-1/2 of each loaf pan with the batter and sprinkle 2 tablespoons of the topping in each pan
Spread the remaining batter between the two pans. Top with the rest of the sugar mixture over the tops of each loaf.
Bake for about 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Back in the 1990's? It was ALL the Rage for Zucchini Breads! I worked at People's houses, as a Home Support Worker, for the Victorian Order of Nurses. Every Lady Client wanted me to Try a piece, with a cup of tea! It gave me the perfect Experiment Source TO Find the perfect Recipie! 😂
It did not take long for me to start saying "No Thank you!" I hated them!
Then I went to my GF's house, who was always a perfect Baker. And she asked if I would like some cake with my tea? I asked What Kind is it? Zucchini... No Thanks! I told her why and we had a good laugh! Then I said Wait! I want to try yours! Yours is probably better!
Sure enough! She had the Perfect Recipie! I took it! 😅
We have also been working on the challenge. We are almost done! I'm flash freezing peppers right now and later. In a little bit or tomorrow, I'm fermenting cherry & grape tomatoes. My husband will be working on fermenting our abundant cayenne harvests. After that, all we have left is bell peppers. The freezers are bursting and we have canning jars full waiting for the shelves. We could have done more but we both got laid up with a bad cold 2 weeks ago.
Sounds awesome!! I have never fermented tomatoes. I am intrigued lol. Great work and I’m sorry you got sick. Tomatoes are just coming in enough to process. Making either chili base or pasta sauce today. Or pizza sauce 😂😂😂. I have some Mrs wages packets
@pikecreekfarm I've never had them either but we have so many left. I already made tons of sauce and still have them coming. I'm in Georgia so we have been getting them for a few months now and want to try something new. Already made pizza sauce too. So many tomatoes!

Renea, you added 1 and 3/4 cup of sugar, the written recipe says 1 and 1/4.. We love snickerdoodle cookies so we should love this bread too.
