Here is little fun fact about vestal virgins: In ancient Rome, if a vestal failed to protect her chastity or let the holy flame die out, she would be sent to a underground chamber with very limited supply and far from any light to be burried alive. She would be sentenced to die in the darkest dungeon per say.

I actually really love what darkest dungeon 2 did to the story and her character in showing how the light actually doesn't agree with a lot of the churches methods and instead wants it's followers to be free and ends up helping the vestal escape
My theory is that she was punished/promoted to a vestal and was forced to move and cleanse the corruption of Hamlet of their wicked corruption. Especially considering she doesn't seem to be good in combat and somewhat okay at supporting the people that are.... "Different" :)
She had trouble with lustful thoughts which she was frequently punished for. One night when watching a sacred flame she spotted a couple making love and during this distraction a gust of wind blew out the flame and she left the church either willingly or was forced out.
Maybe she was sent to penitent crusade, after her sin, that's why she wearing armor and chasity belt? Maybe she is on her path to redemption trought death in sacred battle.
Agreed, something about that convent at the least strikes me as messed up in some fashion. For all we know the place was corrupted not unlike the Hamlet and the areas around it.
