My brother was the best Teppanyaki chef in USA. He was able to trim off 12 shrimps tail, vain and head in less than 3 sec. His hands moved so fast and the only things people saw were heads went north, vain in center and tails went south. He retired yrs ago

I recall some steaks prepared in front of customers, where the chef use their hand to put some salt on the steak, cut the steak into strips and feed to customer mouth. I don't see problem with that, what's the problem here, as long as they work all day in the kitchen.
