I have to chime in in agreement with everyone else as to how much I appreciate all the work that you put in to your videos. I'm also glad that you use these products the way you would normally use them. the dry bread tasting, or however a lot of times they get tested doesn't really give us a good answer of how it's going to affect us in everyday life. I really appreciate you, and I am glad that you're sticking in there with us. stay as safe as you can, God bless!

FYI - Each of these tests was done in a fasted state where my glucose had been stable for several hours, with a blood sugar in the mid 90s or lower. Timing on the test varied a bit from day to day depending on when I felt hungry and when I could film (based on the availability of the kitchen).

I'm wondering if you have a summary drop-down with all of the bread you have tested. I'm looking for healthy life which is basically what I have found I liked the best but it's not super low carb but then again I don't eat a lot of bread so I'm going to try one of them you mention that takes the gold card to pay for it. And I have to buy four or eight loaves which is a crazy amount of bread for me even if I freeze it.
But for quick grilled sandwich I'm using this healthy life white or sometimes wheat. It seems all of them have wheat junk in the ingredients, along with the Whey Protein Isolate. Aldi breads have that weird sponge and taste of air because it doesn't have enough normal bread ingredients in it. So I don't care about testing those brands.
Just the healthy life, if you haven't already. I don't even know how to quickly figure it out honestly. Which is why I'm asking for a list with links back to your videos.

I would appreciate testing the GF versions as this has wheat /starches/raisins which will cause insulin and glucose spikes. Would be interested if the amylose version of keto bread would have the same impact. Likely yes but would be interesting to confirm. Thanks for the video.

Same here! IIRC, the GF versions have 1 fewer net carbs per slice (1 vs 2) than the non-GF, but the loaves are a bit more expensive. If we figure out the impact is nil, the extra $1-$2 would be worth it, IMO!

I was looking up for keto bread recipes, and in Canadian dollars, it would cost me about $15 or more to make only ONE keto loaf at home using ingredients such as egg white powder or different flours and powders (almond, coconut, psyllium husk, etc.).
At Costco, it's cheaper to buy this Carbonaut bread that comes in a 2-pack at ~$12.50 or sometimes less! That's roughly $6.25 per loaf! 😃 I usually love cooking from scratch, but I don't want to break the bank either for fancy ksto ingredients. XD lol

Thanks for the testing Steve. This video reinforces what I have been considering for a while. I believe that the best bread that I can put in my body is some that I make myself. I have a lot to deal with before January 1, so my major bread and noodle making will probably have to wait until next year. I'm gotta try the spherification inspired spaghetti noodles and some PSMF egg white bread to get me through the rest of this year. Hopefully January will give me the opportunity to put on my mad scientist chef's hat.

Wife and I tried the white and seeded varieties a few months ago. We both thought it was OK, for "store bought" (comes in a plastic bag type) bread. She is more concerned about carbs than I am. I have been eating a slice of Ezekial bread 2-3 times per week, so 10 carbs added to a meal does not bother me. She was more concerned about the idea of modified starches as ingredients. Me not so much. We bought 2 loafs and decided the price was not worth the convenience. Plus, if we are going to "waste carbs" , it had better taste better than store bought bread. Like Sierra Nevada Ale, for instance.

  • @myramyraUSA

This was very interesting. I wonder if Dave’s killer bread would have more fiber in it, if the blood glucose response would have been different. 12 g of fiber in the buns is quite a bit, and I wonder if that is really a good idea. Many of the keto breads give me digestive issues when they contain a ton of fiber. I also have the feeling with keto products in general when they stick in a ton of fiber that it’s sort of cheating. I think for many it is better to pay attention to total carbs instead of net carbs.

The best "white bread" we have found so far is Sola bread. We buy it at Costco. But Walmart stocks it in our area now. The Sola sweet and buttery version is great.
I do what I call the Yawn test. If I eat something and I have a blood sugar spike, after about and hour I will be yawning like crazy. If there is no yawning, then no sugar spike!
So far this Sola bread passes the yawn test. But, I am always eating it with something, eggs, bacon, sausage, maybe some lunch meat with mayo. You get it. Could be something to the idea of "fat blunt ". (Not the kind of fat blunt you smoke)

Great analysis. Ive tried all the “keto” breads and the Carbonaut has been the winner on texture, taste and mouth feel compared to whole grain bread. Still, whenever I see a LOT of fibre like psyllium and tapioca starch I think its used to “cancel” out the carb base. Especially sweet bars like Quest. Seems a bit of a cheat and I think your video says that. Your body still recognizes complex starch as glucose. period.

    • @pillsber
      @pillsber 2 ปีที่แล้ว

Fiber does NOT cancel out carbs. That is an error in understanding. The way it works is when a fiber is a technical carb, but is undigestible, ( though a technical carb ) it can be subtracted from the total carbs. It's a point of of a lot of confusion. So much so, some people think if they eat the equivalent amount of psyllium husk fiber it will actually cancel out sugar or bread starch. I ASSURE YOU AS A CHEMIST, THIS IS NOT TRUE AT ALL. I hope this explanation helps. And I do wish someone on youtube would explain this better in their vids. However, this is a stone cold correct explanation.

I like the Carbonaut Gluten Free white bread. It has 1 net carb per slice. Pretty good, but I agree it has a strange kind of “powdery” texture to it. It reminded me of stories I’ve heard of bakers adding plaster of Paris to their bread dough during war times to make it go further. I’m sure this doesn’t have plaster in it, just an impression I get when I eat it. Still, if you are Keto AND Gluten Free, pickin’s are slim.

I'm pre-diabetic & have to watch my insulin spikes especially because i'm trying to lose weight. Does anyone know if it has been tested before? These are the ingredients: Modified resistant tapioca starch, high oleic sunflower oil, native cornstarch, psyllium chicory root fiber, yeast, modified cellulose, coconut sugar, rice bran, xanthan gum, natural flavor, salt. I'm willing to go back to WHOLE FOODS & buy another brand if someone has a better suggestion.

I know the glucose tests are (literally) a pain, buy I find them very helpful.
Also, as you said, own your own results! When you eat a product like this, is there a difference between the glucose response in a person who has been in ketosis for 2 years vs, a person who has just started? Probably. The body adapts and a long term low-carb diet which helps you to heal and clean your liver, will likely be more forgiving when eating the occasional higher carb meal.

Thanks Steve for this eagerly anticipated review of Carbonaut breads. I get all of these from Costco in Canada and is pretty much the only bread me and my wife will eat. We weren't fans of the seeded one but the white and buns are great. We're not diabetic and we don't eat them all the time but when we get the urge for a grilled cheese or a burger, they're good to curb those cravings. I was a little disappointed to see those spikes in your glucose however looks like it doesn't knock you out of ketosis.
Another "bread" we often eat are Broghies. Low everything even though they are made with popped wheat. Great to eat with eggs or topped with cheese. If you toast and butter them, they smell like buttered popcorn. Would be cool if you could review those :-)

Thank you so much for doing a review of carbonaut bread! While still reasonable when combining it with fat, ultimately I think it should be eaten sparingly. Base culture does a clean keto bread that would be interesting to see a review on. Keep up the good work, Steve!

Thank you so much for the review! I really liked the comparison to the wheat bread. It kind of makes me think you could occasionally have a sandwich of real wheat bread without too bad of a blood sugar spike and remain fat adapted. However, it would cause inflammation but still good to know. I think I would rather do that than pay that much for the bread. But still good to have another alternative on the market. It makes you wonder though, did the wheat bread not spike you that much because of the type of wheat and other ingredients in the bread. I know that fat blunts a blood sugar spike but could it also be other things that would normally be put in bread such as preservatives, or other mystery ingredients? I think it would be interesting to find out.

@13:21 comparing the ingredients, the white bread has whole wheat flour, plus the serving size is different. 1 slice 34g / 1 bun 65g ... roughly 4g net c's for the white burger version(2 slices) and 3g net c's for the bun. Regardless, do you have plans to do blood tests for the homemade bread recipes, Keto Upgrade or Keto Fusion for example? They seem to use less sketchy ingredients and starches.

I will try this. When I eat low carb bread I only eat 1 slice cut 2/3 & 1/3, use 2/3 on the bottom. It's less carbs & still gets the bread part of a sandwich you want. I do 1/2 a bun. I freeze it so I don't waste any. Defrost 3power in microwave 20ish seconds. I enjoyed the tests & appreciate your videos!👏🙏

I just found this video...I really appreciate your honesty! I'm disappointed in the results, cause I just tried the seeded version and I was blown away by the taste and texture! I was like "This is BREAD?! ACTUAL bread!" Lol...So much better than the experience with the other (just as expensive) keto bread I previously had.
Well...I mean...I have a whole loaf to enjoy now and not letting it go to waste, but I may need to freeze half of it and enjoy it less often, if it has those kind of glucose spikes and you're more fat adapted than I am...Darn it! Lol 😂

2 days ago I was at my local Kroger / Smith's grocery store and found a bread by Oroweat that said KETO with only 2 net carbs. Compared to all the other keto breads, this one tastes like bread chews like bread and really has the sandwich bread down pat. I just paid $4.17 for a 20 oz loaf. Not a bad price and available at the local grocery store so no special shopping to get it. We do not have Aldi's in Albuquerque New Mexico and I am a Sam's member not a Costco member. Maybe you will try it out. I am a diabetic who is now on dialysis so I have fewer restrictions on my diet then I did when I just had CKD. I do hemodialysis at home 5 times a week for 2 hours a day and I can eat or drink anything I want. When I first learned about Keto I was in the advanced stages of CKD(Chronic Kidney Disease) and was told that a high protein diet was not good for kidney disease. If you get the opportunity check it out. You may or may not like it and it may or may not work in your keto lifestyle. Just works for me. And yes, my real name is Merry Christmas Claus and my husband's legal name is Santa Claus be well and happy holidays

Thanks for doing all the testing Steve. I've been eating Carbonaut bread for over a year now. I keep it in the freezer and only take out a piece or two at a time. To have the odd sandwich I just don't care how much it costs. Here in Canada a lot of regular bread is $6.50 a loaf so to pay a couple dollars more isn't a deal breaker for me. I agree about the Cinnamon Raisin bread - it just seems to turn to mush. My favourite is the Oat Bread, which they didn't send you and then the Seeded Bread. I find they both need a bit of salt but that is easy to add. The only downside of the Seeded Bread is that no matter how careful I am I find those little black sesame seeds all over the house for a week. It is so worth it though. I'm going to make turkey stuffing with it this Thanksgiving.

I appreciated this video. However, it seems to me that when you were comparing the labels on white bread and the burger bun, you were saying the burger bun had much higher carbs. But that was comparing one slice of white bread (ie, the stated serving size) to a whole burger bun. But in the glucose test, you used two slices of white bread vs one burger bun so then, naturally the bun showed much lower effect on the glucose. This is another case of "tricky labeling".

I live in Australia, and there's a Mom and Pop company that makes the best keto friendly bread. I wish they could market it in America since we're moving back there next year. If you have an email address, I'll send you a photo of the ingredients. When I was in the U.S. this year, I checked all the products marketed as keto and found almost none that I actually wanted to add to my daily carbs. But this bread.... it doesn't cheat by insisting on "net" carbs, and I can eat 2 or 3 slices a week, whenever I feel a craving for bread. I'm going to phone them and ask them to get a kitchen in America and start making and selling the bread there.

With as many products that you test AND that spike your glucose, I wonder if you have and/or when you did come to a place where you restricted testing foods that might impact your glucose. If I were you I probably would try to not do testing's more than once per month. Maybe once every other month. I have a hard enough time staying in keto, after 4 years, just on the regular.

The only way you will get any gluten taste or gluten strands, if you make bread with like bread flour, or all purpose flour. The alternate stuff in those breads won't get you any gluten. Just me going on what I have learned for making bread since I am going to try and get back into baking. Not sure how since like me I don't eat bread any more.

appears they removed the wheat starch so they could market it as gluten free, which makes it a fairly normal price. Celiacs aren't looking for "the best" bread, we're looking for the bread that can maintain its structure so we don't have to prep full course meals for lunch

Thanks, Steve, your really thorough test was super helpful. I've been keto for almost 3 years, and yea, I cheat sometimes. That's a fact. So, spending a little more money to cheat safer than real cheating is plus. And since most keto bread is not that good, and real bread isn't even that fun anymore, I'm happy to know an occasional burger can happen. Can't do it all the time or I'll turn into a blimp, and I know I will need to check things against my own personal response, but if it's actually decent tasting and I can recover in a day...I'm thrilled!
