ZIMBABWEAN MAWUYU ICE-CREAM (Baobab ice-cream)

  • In this video I will be showing you guys how I use a Zimbabwean delicacy ingredient to make home made ice- cream which is also known as Baobab in English. Please let me know if you make this
    Recipe is as follows:
    2 baobabs (mawuyu) 2eggs, 150g caster sugar, 574ml whipping or double cream, 237ml whole milk.
    Method
    1.Smash the baobab on a hard surface to get the fruit out.
    2.Once fruit is out empty it in a saucepan and add the milk you will use in the recipe to soak the fruit if you later need extra milk you can add.
    3.Boil the two combined until all the fruit has melted and you are left with the seeds only.
    4.Meanwhile whisk the 2 eggs, sugar, cream and milk and set it aside
    5.Use a sieve to drain the milk infused with the fruit and to also catch the seeds and string bits so they do not go in your mixture.
    6.Pour the milk mixture and the fruit paste in the cream, sugar, egg mixture and mix.
    7.Use a sieve again to pour mixture in ice-cream machine and start the machine.
    8. When your ice-cream machine stops if its not the desired texture you can put it in the freezer so it hardens a bit more.
