Actual Parmigiano Reggiano from grass-fed livestock is expensive as heck, but for a reason. As far as cheese goes, it is a great source of Calcium and Vitamin A, as well as healthy fats. Downside is, since it is ripened for 12 months it tends to be higher in histamines if memory serves. Also be mindful of fake brands in the States, that might market the cheese as "Parmesan" and be nowhere near the actual official quality standard. Also where I am from, generally sheep or goat milk cheese is a thing - lower in lactose, more easily digestible and since the sheep are pretty much all pasture raised, the milk and cheese nutritional profile is incomparable to the inflammation promoting mass-produced dairy product. You might want to look into that too. Long story short, source carefully and if possible move away from bovine dairy products.

Not to be a wet blanket, but this video seems to be lacking a few key factors and does not mention foods that actually reduce risk of CVS disease further down the line.
In short,
DON'T:
Consume anything pro-inflammatory e.g. refined carbs, hydrogenated oils or anything too high in sugars (actually includes fruits, unless eaten in moderation).
Chronic inflammation is one thing, but hyperglycemia damages the endothelial glycocalyx - the inner lining of your blood vessels. Research is ongoing, but the damage to the glycocalyx is seen as one main cause of plagues in the arteries.
DO:
Consume a carefully sourced, clean, nutrient rich diet. This includes both plant based, but also ANIMAL based products, both in adequate moderation and sourced carefully. Beef liver is extremely rich in essential nutrients, for example Retinol, the actual Vitamin A. What you get from plant-based foods is Beta carotene, its precursor that body has to digest and convert into Retinol - and it does so very inefficiently.
Also include NATTO in your diet. Nattokinase, a unique enzyme present in natto due to a very special bacteria has been actually proven to reduce the clogging of arteries.
Last but not least, FASTING!

The smaller the fish (and thus the lower it is on the food chain), the less mercury and other heavy metals it will accumulate over its lifetime. What I do not agree with that was mentioned in the video, is mackerel. Depending on the region you get them, they can be pretty high in heavy metal content too.
Sardines and other small fish are the better choice.
Also, there is a difference between farmed and caught. Farmed tend to be much higher in antibiotics and other chemicals.
Wild caught sea fish on the other hand, high in environmental pollutants like heavy metals.
