I spent a year trying to relearn how to bake, and couldn't understand what I was doing wrong--I live in Germany and have to convert ALL my recipes, except for a bunch of cup measures that I brought with me, and it took so long to figure out just to use a calculator/digital scale and drop them altogether. Most of my foods were dense, dry, brittle. I think it was on YOUR channel that I learned how to be patient with wet dough (I began to re-learn baking about two years ago soon with a very wet white bread recipe). 😜 Finding your channel saved me so much grief! Thank you for pointing out this particular "problem" with measuring. I hope many home cooks benefit!

Hi there! Hope the weather’s been nice for you in Florida than up here. We got hit with a massive storm and it’s been a lot of cleanup for the Tristate. So many still underwater and without power. I’ll be interested in what your measuring cups end up with ultimately. I have had some really big outliers give as much as 200g! I found when mimicking others recipes, one way to get good results is to follow their lead. If they are using cups, use cups. If they are using scales, use scales. I make sure my recipe works with both and try a few different brands of measuring cups (why I have so many!) to ensure people will have success. I think that is why it takes me so long to create a recipe. 🤣😁😳

And even creepier I was looking at miniature scales like the one you have on TV I even put one in my shopping cart on Amazon 2 days ago… I’m playing this on big screen TV. I have also noticed that companies are now mixing up quantities into ounces or grams to confuses as to how much or how little we are getting in a container.
Hello, Neil. Here I am. I am actually a computer program that was watching your shopping cart 🛒 🤗☺️😬 They really are getting sneakier and sneakier with their shrinkflation tactics, aren’t they? For instance, some of the margarines are no longer “margarine” but vegetable oil spread as they have now dipped well below 80% fat. And they didn’t announce it, just quietly removed the label margarine off their product. It’s so hard to even find margarine as a result. If you get a scale like I’m using, I highly recommend getting one with a USB charger. You have to charge them every couple weeks regardless so they keep weighing correctly, but they are so much more cost effective than the ones that need batteries. I used to use the ones with weights in them but they aren’t as easy to find or as accurate as they used to be. I am hoping to be able to post more soon. They are finally finding out answers to my health and I’m optimistic that the specialists I’m seeing this month will have some answers. Wish me luck! Our healthcare system is…lacking.

And then through the magic of electronic eavesdropping, he turned on Facebook marketplace and that was the first item that appeared was exactly what we were talking about. Now that is creepy that a phone conversation or text conversation is being monitored and fit into an algorithm on Facebook marketplace. Although I never buy margarine, I’m a butter man with extra salt added. I do appreciate how we are being deceived. Today was a snow event where we lost power for the day so I stayed home to monitor the generators to make sure that it didn’t flood the basement. Although Walmart and certain shopping areas did have power so I went into Walmart and I was looking at 2 pounds of oranges for six dollars. I mentioned to the guy stocking the counter that everything we buy can be considered as samplers. Yes USB is definitely a smart way to go, although I never considered that they would be out of adjustment so rapidly. Maybe I’ll just stick to eyeballing it. Don’t get me started on healthcare. We have “free healthcare“ in Canada. Nothing is free!. 60% of Canadians do not have a family doctor. And waiting lists are extremely long. A typical visit to the emergency ward is 12 to 15 hours of waiting. Operations can be 23456 years down the road. If you miss an appointment you’re put at the bottom of the list. My sister had a bone spur in her hip. She’s the one who lives in South Carolina. So she went for an exam here and they said two years before there is an opening for the operation. She went back to South Carolina and for $8000 they said we can see you tomorrow morning. So co-pay covered a good part of it and she paid the balance. So there are no flowers to be sent to the medical system in Canada. Then we have the Quebec separatist govt situation which is trying to force everybody to speak only French in Quebec. So they only hire doctors who speak French and can’t figure out why there is a shortage of doctors. They hired from France, Belgium, Tunisia, Morocco, and are now complaining about the Muslim situation. So let’s just say that universal healthcare in Canada is really pitiful.
@nzs316 oh boy. We were just talking about a migraine I’ve been dealing with and up pops ads on our phones and tv for days after. I don’t know what’s worse, targeted ads or ones that are random. I read somewhere recently we now see something like 10K ads a day! I experimented for a week about putting ads on my website to help me pay for it (I don’t make money doing this, I lose money) as they just nearly doubled the price with no warning. The ads were so obnoxious! They were putting four alone in the recipe card. And some were just tasteless I refuse to subject myself and viewers to such nonsense. So I turned them off and will look for a way to justify spending nearly 300 bucks on a website that I do as a hobby when I can’t even work right now to help support our little family. I went off on a feel sorry for me tangent. Haha Oh boy. It really sounds like healthcare sucks for just about everyone except the wealthy. I have a friend in New Zealand who is saying similar changes are taking place in their universal care. They have private healthcare for the richest people and the universal is not as good as it once was years ago. It’s sad to think how many people suffer from treatable diseases they can’t afford. It’s why I’m struggling so much. Somedays I feel so sad as baking was what kept me going and posting these videos take so much out of me now. I’ll be sick for days after this. So what I do is I go through the phone and all the different newsfeeds tonight click save for later on the ones that interest me and then I just look on my computer and it’s ad free. Although watching TH-cam on the television through Amazon fire whatever it is. Yeah they walloped you with commercials. So what’s the solution pay $120 to TH-cam to have no ads. Does this mean that the more you work your Grey matter, the more severe your migraines become? Believe or not, I was a straight up whisky girl back in the day. I also liked incredibly dry red wines. I have not had a drink in many years as it makes my headaches worse. TH-cam is where I see most of the ads or when a website makes you disable it to read an article just to find out it was click bait to see ads. 😡🤬😖😤 Unfortunately, typing and getting on computers/phones/tv is the number two trigger for severe migraines that last for days and days. Smells are the first trigger. Then foods I used to adore. I can’t even bake or eat certain foods anymore (banana bread for one.) When the migraines hit, other weird symptoms show up like the fainting, blurry vision, bad math (not great when baking or making videos) or my arm failing. You see that happen in this one where I toss like half my flour on the counter. 🤦🏻♀️ It is so incredibly frustrating as used baking and this little channel for so long as an outlet. A way to feel useful again if that makes sense. Lately, I feel…pointless? So I decided to make a video, say hello to friends like you and deal with the pain heading my direction tomorrow. 😬🤣 I have bright days when I hear how you all are getting along in life and what you’ve been doing/baking. If a recipe calls for 235g plain flour and doesn't specify sifted flour, does it make a difference if its 235g of sifted flour or 235g of scooped flour, just as long as its 235g of flour?
Hi Gidget! The videos will be here when you are ready. :) Unless a recipe states sifted, it doesn't matter as long as it equals 235g. Sifting was primarily done years ago to sort out the weevils and other grain bugs from the flour. The only time I sift flour is when it's lumpy or I see little critters walking around. That and for macarons. 🤣
@@Jacksonsjob I had never see a flour wevil in my life until 2020. I think stores and warehouses stopped having their routine spraying done, because I brought home both crackers and flour with them in it. They infested my pantry before I knew it. 😱 laaaaw it took at least 3 months of weekly spraying and to kill all those tiny black bugs. I had to throw away everything in the pantry because they were hiding in all boxes, even in the boxes of trash bags.🤬 I would say we lost easily $500 in food and household goods that had to be thrown out. Bugs never die off down here because it never reaches freezing temperatures here. 🤦♀️ I'm still traumatized (see rant above 😆)
I bet you had so much fun cleaning that pantry. We got them a few years ago and I discovered them when a giant spider crawled out of the cabinet. He was hunting them down. It was such a pain going through every single item. Then came from a dog treat a delivery man handed to us on our walk. It was a really hot day and our dogs get sick if they eat too soon after walks. We stuck it in the cabinet and forgot it was there for a few weeks. I guess the heat of his truck made the little buggers happy and they just hatched and marched all around looking for a home. My worst experience was finding a bunch of dead ones in the bottom of the bowl of pasta I was just eating. I think I couldn’t eat pasta for like three months after that one. 😳😩😂
I love using a scale. Its quicker an the results are the same. I have a question that has nothing to do with your video. I want to make Rye sourdough bread but i dont really want to make an whole different start. Can i take some starter an when feeding it add Rye instead?
Hi, there! Great to see you and great timing as I was just about to head off to bed. 😴 💤 The answer to your question is absolutely! I will often take a spoonful of my starter and feed it whole wheat or rye whenever I want to switch up the bread. However, since Rye does have a lower gluten content, some find it beneficial (easier) to do half white wheat flour and half rye to ensure their starter is strong and stable. Hope that’s helpful.
