Passing the knowledge is the best thing and great skill to have. I have stopped doing online classes. But next year I’m thinking to do some workshops, I just need to organise myself into it.

What do you think of the rack master ovens? do you bake all the pastries in the convection oven? I'm looking to buy a one mostly for cookies, muffins, croissants and bagels.
I had an order to deliver at 7am.. I could have delayed it but didn't. Delivered a hot product. It didn't make it to its destination 😅. I had to let them have it for free coz it was just ruined. 😔... The lessons you learn right...
Just found your channel and I realized you don’t wear a mask working with dough. I heard that if you work in a bakery for many years you can get lung cancer?? I am not sure of the differences in setting eg. Private vs factory… if that matters. Maybe with your reach and occupational interest you can look into the matter and help bring awareness or even suggest solutions if applicable. It’s great oven. I baked pretty much all my pastry in conventional oven, I prefer the fan they bake well there. But cinnamon buns on rm2020
