      I have a question... Why do you freeze what you dehydrate? Is that necessary?

      @@missmix48 I don't freeze it, I vacuum seal it and put it in food storage. I used to freeze the fresh zucchini chunks - that is what I meant here

    One of my favorite ways is to mix my powdered zuch's with powdered onions, bell peppers, tomatoes and then grind some dried Basil and Parsley...add some spices and it's my own Italian seasoning that I can add as a topping for pizza or Foccaccia (?sp?) bread, or mix into some tomato sauce for pizza sauce. Just works around here...

    I just made zucchini fritters and froze them. Shredded zucchini, onion, carrot. Drain or squeeze water out. Add flour, egg. Mix and fry. :)

The same thing use to happen to me, and it was pure torture for me, maybe for Heidi as well, because her videos r sooo full of info, I could not help myself, and watch one right after the other (bombarding her with many, many questions) but through it all, she was kind and patient with me. But now, knowing my iPhone better, I don’t worry if I tap an icon that sounds as interesting as the one I’m watching, because now, I know where to go to finish watching it. I use to be very ignorant to the iPhone, I still don’t know a lot. Anyway, ur comment brought on a past memory, and I felt like sharing it. Have a wonderful day

    I use my zucchini for zucchini boats, I add my zucchini in my spaghetti sauce I even put it in my chili. I Shredded Zucchini in casserole, I also shredded zucchini and brown it and put Parmesan and melt it. Oh yummy!!!!!! I put my zucchini in my stews, soups. I also put shredded zucchini on pizza as well. I think I am going to try to powder the zucchini pancakes..

    I will slice the zucchini lengthwise with a mandolin and dehydrate them until they are leathery and use it right away in place of lasagna noodles. Dehydration keeps them from making the lasagna watery.

    Wow, what a ton of ideas! Thank you so much for sharing your creativity! Dehydrate into cubes or slices, make them into powder after drying, use the raw/lightly sauted rounds for a sandwich, make a lasagne, noodles, fritters, chips, make a relish or salsa, and freeze. Use in soups, stews, casseroles, stir-frys, pasta sauces, bread, gravies, pancakes, muffins - basically anything! Generally we freeze ours if we don't eat them all up fresh first! We love them salted with nutritional yeast and mineral salt.

    I grated mine then spread them on dehydrator sheets with sprinkled with fajita seasoning. They are lovely on jacket potatoes with cream cheese or on top of bolagnaise.

    Mrs Rain, I just realized I stored all my summer squash and zucchini incorrectly. They went rancid. This is such a blessing. I know now how to preserve. We live in a humid climate in Pennsylvania. Shalom and Blessings. I finally got my vacuum sealer which will help. Blessings sis. Your hard work and time is so helpful to us newbies learning to preserve our food. I am so new to homesteading/gardening/canning. thank you.

    What great ideas Heidi. Last year I grated and dehydrated zucchini for bread and quiche but never even thought of dehydrating chopped zucchini or cutting it in rounds and cutting that in half to dehydrate. You are such an inspiration to me. I’ve been dehydrating kale for a mixed green powder and did carrot tops the other day and now I will be doing some zucchini too. Thanks again for all the hard work you and Patrick put into these videos. God Bless,

    Great ideas. Never powdered zucchini . I dehydrate as shredded and add to any liquid on the stove, soups, chili, sauces. I do dehydrate garlic (sliced) and onions ( chopped) and powder them. Garlic powder smells like garlic instead if whatever you get in powder form at the stores. I have diced zucchini from last year. I will try powdering that. Again, great ideas and very timely!

    Wow! I’d never seen the brake bleeder contraption thing. That’s ingenious! I usually just plop in a O2 absorber packet in my dehydrated foods. I hear a “plink” after an hour as the vacuum seals. It keeps for years. Love ‘em! I’ll be looking into picking up a brake bleeder. I’m thinking Harbor Freight?

    Thank you! I have been being given a lot of zucchini from my mom who has a couple plants in her garden. Up to now I have been shredding and putting it in measured bags in the freezer for use in muffins/breads.

      My food dehydrator is now going with zucchini and a couple sweet potatoes that I needed to do something with pretty soon. Have only had this dehydrator for about a month so I am still trying to figure out what to dehydrate and how to use the dehydrated foods.

    I absolutely love zucchini! When I started dehydrating my zucchini I made it into chunks, slices and chips… Absolutely love them and now that I see that you can make it into a powder I might even do that too… Thanks for all that you do!

    Great video.. try using the zuchs in place of an avocado for guacamole. Use chilies onion and cilantro tomatillo salt oil. Lots of Taquerias do that so that the dip doesn't turn color. Tastes great. Recipes are all over you tube. Take care!

    My zucchini didn't do well this year, but I did dehydrate all that I grew plus a couple zucchini breads for freezer. Thank you for all the multiple ideas, you are always so informative with excellent recipes. Blessings sweet friend

    And I forgot to share that I made baked zucchini sticks. Easy peasy. But into sticks, coat with whipped eggs, then bread crumbs...put them on a greased sheet and then season with your choice of spice. I just did sea salt, fresh ground pepper, and a teeny bit of cayenne. Back for 20 to 25 minutes at 425. Ranch salad dressing was a good dip for them. I even reheated some for lunch the next day and they were still yummy.

    i'm not able 2 do any of this anymore but i still like 2 watch it, n i'm thinking my mate is more likely willing 2 dry, 4 food storage, so thnx much 4 y'alls life-style- way back when, i had a huge overabundance of zuc n my sis n i shredded a ton of it n dried it all, n we used it in pretty much everything- its especially good in zuc bread n no need 2 rehydrate- Father Bless y'all

    Hello Heidi! WOW, a plethora of ways on how to store and use zucchini! The info + tips and tricks (I added to ur title, cause u gave some) 😁 u gave, just overflows the space of Patrick’s big truck!!! To bad people back n the day didn’t have this knowledge, I heard stories that were considered a horror, people would roll up car windows, lock the doors, or else they’d find it loaded the next day with zucchini, honestly, I’d call that a non gardeners gift of goodies! With what u show on how to persevere and store food, the little I eat, honestly, one good garden or two will last me a lifetime, when I’m older and, ha, well, I’m gray now, with the knowledge u’ve given me (and more to learn) I’ll be sitting there n my old age with a grand of a smile, looking at ALL those jars...filled with food! Seriously Heidi...I truly THANK YOU. That cannot be said enough with how things have been, with how worse it’s going to become, I feel better, and more confident n the area of food, can u guess what will make me feel a ton more better and confident, I’ve pestered y’all a lot on it here and there, and now (I need Cathy Zimmerman’s help here, she’s better than me at pestering, she got y’all to make the silver motor)😉👍🏼.     My kids family favorite zucchini preserve recipe is mock pineapple zucchini. You can shred it and use it as a ice cream topping or in pineapple cake. Or just simply do cubed and eat it strait out of the jars like my kids.

    Love to cube it. Add canned spaghetti sauce. Add a little shedded cheese. Little parmesean. Can this mix and its a great side dish for the whole year.( 20 minutes in the instant pot on the canning option makes 4 pints.) Easy!😊🇺🇸

    I like to cut 1/2" zucchini slices on the diagonal, brush olive oil on both sides and grill with our protein. Of course there are always left over slices which I refrigerate and use the next day in place of bread to make sandwiches with. Yes it's messy but so delicious.

    Great video and ideas. The powder can be added to smoothies (did you say that though?) And although I do throw this together with non-homemade ingredients, it’s still really good: I canned quarts of zucchini last year, I open a jar and drain it and pour it into a casserole dish. I usually add a pint of my canned yellow squash also drained, or you can use a pint of a different vegetable. I add one can cream of mushroom soup and mix in some of those crunchy onions you buy in the plastic container. Bake at 350 deg until it’s warmed and bubbly, then I sprinkle some more of the crunchy onions on top of the casserole and bake 15 minutes more. It’s pretty similar to the green bean casserole some folks make for holiday meals.

      I have never actually canned zucchini other than with the relish and salsa. I was afraid it would turn out too mushy. I just may give that a try this year!

    Ive been neck deep in processing zucchini as well. I made up a bunch of fermented dill and garlic zucchini pickles. They turned out soooo yummy! Also made some spicy zucchini and peach chutney. My tomato crop sure didnt do well this year so I am grateful for the long season of zucchini this year! Thanks for sharing all your ideas and recipes!!

    When it comes to soup, I prefer to do the same. So easy to make soup that way. Dehydrated aged vegetables and broth or bouillon.

    Mom and I usually stir fry zucchini with yellow neck squash and eat it with rice. Annie's Simple Life uses it in place of pasta. She and her husband are gluten free.

      @@joybickerstaff194 A little oil or water will do. You can also add things like lemon, lime, calamansi, etc. Usually we do steamed rice (my Mom is from the Philippines and I'm technically half but I'm not sure in what) but fried rice is good with it as well.

    I don't really care much for it but I'll grow like 1or2 each summer for using during that season. I do same with yellow squash. It just always turns out a mushy mess if frozen or canned plus doesn't have a lot taste anyway. But I know Lots of people really like Zucchini 👍 so I'll bet dehydrating it is the best way.

    Live in San Jose paid over $2.00/pound for zucchini yesterday. I remember when gardeners had trouble giving it away. Of course that was when I lived in farm country.

      Andrea Voss Hello, when I see the cost of vegetables at the store, it blows my mind, looking back n time, they were affordable, and healthier for u, not so now, (well, depending on one paycheck) but thinking of what the prices will be n the future, very scary, that’s why I’m watching and learning all I can on what’s needed to live now, not to mention how to better my green thumb + irratacating (spell check) the garden pest naturally.     I hate to drink just water, so I make a lot of aqua Fresca's. I blend the chunks of zucchini strain the pulp, and drink the juice, you can add so watermelon, cantaloupe, berries.....its really refreshing.

    I've peeled the really large zucchini and made it into ice cream. It's very good and no one knows there eating zucchini.

      @@RainCountryHomestead I blend it with some water, raw cashews, honey, some salt, vanilla if you want it, but most of the time I don't use it, and other fruits and seasonings of choice. Lemon, peach, raspberries, bananas are all good, but the sky is the limit on this. I have used the unpeeled zucchini, and that makes it a light green color so if you serve it to others who hasn't eaten it before you may get some questions. I used to have a recipe to make zucchini Pineapple, but it called for lots of sugar, so I threw it away after making it once. It tasted very good, but I would call it a pineapple extender because the recipe called for crushed pineapple and pineapple juice. You mixed it all up and canned it.

      That is about what I figured, I was planning to make some nut milk (pecan cashew) today so I can make my vegan cheese so what I can do is simply add the nut milk to the zucchini. Thank you for sharing!

    Use zuchinni discs as chips. Make a dip with cottage cheese and Hidden Valley Ranch dressing mix. Zuchinni and cucumbers make awesome chips.

      Yep, done that too with making chips. I do make my own ranch dressing as well but did not try the zucchini chips in that, just had them with my homemade seasoned salt

    One way I like to use zucchini is adding it to a smoothie. As it is very bland it takes on the fllavour of whatever you put into the smoothie.

    I have just ordered the lids and the brake bleeder that you recommended. Now, do you have a video explaining how to set it up/use it and how will I know how much pressure to use? Also, is it necessary to use the little desiccant packs along with this way of sealing? I would like to avoid using them if possible. I am new to dehydrating.     My kids like z. Squash chips. I slice them thin and soak in lemon juice and salt or onion salt. Then dry. They eat them so fast it's hard to put any up. I also grate it up and dry them.

    My favorite way of having zucchini in the summertime is to cut it up, and roast it on the barbecue after mixing it with some vinaigrette and other seasonings.
    I do have a question for you though. Can zucchini be air-dried? I do have a set of dehydrator racks that can be used with my instant pot Duo crisp, but I don't want the kitchen to be heated up.

      Yep, and many do that. I tried it but it was not for me. I prefer dicing but that is just personal choice

    I also make "apple pie filling" with chunked zucchini. Canned in jars. My aunt taught me that zucchini will absorb any flavor that you combine it with. Hence, apple, pineapple, blackberry, cherry, etc. juice will create your faux filling.

    I read somewhere that you can use zucchini flower in perfect substitution for coconut flour. Have you tried this before with baking or anything like that that calls for coconut flour and if so, did it turn out nicely?

      Nope! I never blanch anything before dehydrating. The only thing I have found actually needs blanching before dehydrating are potatoes. :)

    Have you heard of water bath meat from the Amish I’m going to try it you can do it to zucchini too. Any food I’m not buying a canner at 400.00 plus I got a glass top stove.

      Yes, you can water bath anything if you do it right. I even dug up some vintage canning charts that give times for water bath canning all kinds of foods. It is not just an Amish thing, it is simply what used to be done before pressure canners became the norm. Good thing there is more than one way to skin a cat and that I have a loyal following of those who appreciate and like my style.
