I don't want to make this a long comment - I know you are very busy - but I am compelled by the Holy Spirit to share with you how much you mean to me. My husband and I were raised by our parents who were drug addicts and alcoholics for the majority of our life. We were taught very little about being self-sufficient in even the most basic of areas. We both found the Lord Jesus Christ about 2 years ago and became born-again, shortly after marrying. During our journey with the Lord, He has led us to your channel. Some of the things that the Lord wanted me to learn about being a godly woman have come from your channel. I cannot express to you with words (therefore I will simply continue to give thanks to the Lord for you) about how thankful I am for what you are teaching me! I am not deceived in thinking you are perfect or even a perfect example of a godly woman. However, the Lord is using you to help shape me into the likeness of Jesus. Please do not grow weary of doing these videos no matter what tribulations or opposition may come! The Lord is using you more than you may realize. Yes, I have times I grow weary or feel I am not reaching people the way I should. I have dark days that make me want to throw in the towel - though I DO love what I do here. using vinegar with wet ingredients and baking soda with dry ingredients when baking can replace eggs for rise in things like cookies, cakes, etc. thanks for sharing all your knowledge!
Hi Heidi, What a wonderful video. I loved hearing about all the uses of your vinegars. You are truly the expert!! I love adding vinegar to my pie crusts. I call it my insurance policy because it seems that even if I over work the dough, it comes out great!! And yes, homemade bread is all the better by adding vinegar but you really opened my eyes when you mentioned biscuits and pancakes...I never thought of that!! Thank you!! I have a Scoby on my apple cider vinegar that I started from kombuchi. I've been using it to seal the apples from floating above the liquid for almost a year now. I've had to thin it because it was about 2" thick. Stay cool, it's been over 100 in Texas for several days.
I’m so excited you put this video out. I made some blueberry vinegar a few months ago after watching how you did it. I stuck it in the back of the refrigerator and forgot about it till last weekend. I used it when I harvested Armenian cucumbers and made a tasty cucumber pickle with onions, garlic, and bell peppers. Everyone loves it 💕

It reminds me of my friend and I making what we called an "invention", as teenagers, when going on a picnic: we mixed orange juice and sweet lime juice, and called it "juto", a short form of our combined nicknames. Though simple, we were inordinately proud of it :)

I use raisins soaked in gin and crushed juniper berries for Lyme Disease. I have found it works really good for the pain you get from it! I eat about 5 to 6 raisins about a teaspoon full in the morning,

I have already taken ur vinegar advice and made a few but this year I'm really, really using ur advice since I have ur knowledge AND a ton of fruit coming out of my gardens this year. Been using it mostly for cleaning but planning on trying some in my bath and hair. Just picked my biggest harvest of lavender leaves and my 4 seasonal cuttings of regular mint.. thinking of trying an herbal vinegar. Been making wines just as long as vinegars too. Hello Heidi. Thanks so much for your videos on vinegar making. So I live in Jamaica and the first vinegar attempt was not successful. I then attempted a starfruit vinegar which turned out beautifully. So now, I have two that are still fermenting (1) a raisin vinegar and (2) a sorrel/hibiscus vinegar. Can't wait for them to be complete. Again thank you as I continue to enjoy your videos. Blessings.
I have some really crazy questions. Can you make cucumber vinegar? (or will you end up making pickles) Can you use dried or frozen fruits to make vinegar? I'm thinking dried you can because raisins are dried. My peach vinegar had sediment in the bottom. I gave it to my son to wash his hair with and am afraid if he finds bits of peach in his hair he will never try it again. I strained it twice but not through a cloth. Do you strain through a cloth? Do you ever have sediment when you use mushy fruit like peach? Have you ever made a vinegar that leaves a stain? I was thinking maybe berries would? Can you make beet vinegar and would that stain things red? I told you my questions were crazy ones. Can vinegar be made from pine needles (not dried up but, green ones)? Since you used juniper and cedar I'm guessing pine would work? How do you know what will make a vinegar? Is there a rule of thumb or - just anything in sugar and water turns to vinegar? Will just sugar and water alone turn to vinegar? Could you make vinegar from sugar, water and spices like cloves, cayenne ect? Would they burn your skin? How do you calculate how much you need? What do you do with the mothers when you want to use that vinegar? Don't feel any obligation to answer any of this - I know it would wear someone out. I was really just thinking/wondering things aloud.
Lots of questions but none of the them are crazy. I think cucumber vinegar would be a good one but I have yet to try it. I think I just might now that you have mentioned it. I have tried frozen fruits and they do not always turn out great. Blackberry vinegar is lovely and tasty but it does stain terribly so I stopped using it for my hair because it kept making stains on the tub where I keep the bottle, though it may be great for adding a temporary color to hair - I never happened to notice if it did that though. I believe I have made vinegar from dried herbs but other than raisins, I have not done any dried fruit, however, I think it would work fine. I think you can use anything you want that sounds good, the general rule is making sure you have plenty of sugar to compensate what is lacking in the items used. I would say go at least a half cup of sugar when using herbs, pine, or anything like that to get a strong enough vinegar to be multi purpose. I have been thinking one should be able to make vinegar with just sugar and water and that is another thing I have wanted to try. My guess is that it would be best to add a bit of vinegar with the mother, or the scoby mother, to it to insure it will ferment since your fruits, herbs, and such all have a certain amount of yeast that helps get it going. Sometimes I just store the mothers in the jar with the strained vinegar, sometimes I toss them to the chickens.
Now I have another question. Does the vessel you make vinegar in have to be glass? My daughter just picked a huge amount of mint. Even after picking it from the stems I have 3 gallon jars stuffed with mint and I haven't even added the hollyhock flowers. Then I realized that I would have those gallon jars in use for the next couple months at least and I might need them for something else. I am putting them in ice cream buckets. I think it's OK because vinegar is sold in plastic containers at the store. I just thought I'd check with you in case you've researched this already. Do you think plastic ice cream buckets will be OK for making vinegar in?

I am constantly doing a bing watching of all of your videos and taking notes..have learned so much and putting your info to use..please write a book..would be the first to purchase but until then keep making your videos..have slowing working at a mature age to become more self sufficient..
I do get a lot of requests for a book but I simply do not have time do that, make videos, keep up on our etsy store, watch my grandbaby, and keep up on all my chores and gardening as well. I would have to give up youtube to pull that off and I am not willing to do that right now.

Hidie, the new shelves work well in the corner. A note, the wall could, as well, support with more shelving for all your jars. Building in the wall space adds value. More shelves which hold to behold all your products. 🍻
Yes, but the wall directly in front of me when I am standing at the counter would not work to build on due to the pocket door on the other side. Free standing shelves, maybe but I do not want anything like that there as it would take up too much space. I need to keep that space for ferments and for work space

Hello Heidi, wanted to ask you? Have you ever made vinegar with mixed fruits, such as strawberries tops, apple skins and blueberries? I didn’t have enough of each of them and I wanted to get started so I mixed them in the same container added my sugar and water covered and well.... we’ll see where it goes. LOL "darn I forgot what this one is", this sound so much like me. I have been dehydrating everyday, I do try to limit to two things a day, but yesterday I had not jar one from the day before and I couldn't remember what it was. I had to think about it a minute but remembered it was blackberry leaves. At my age now, if I don't label everything from one day to the next I forget. Know all that junk mail you get? Take the parts with blank spots- even small ones & save those bits. Only takes a minute more than direct trash toss. Use those as labels. Put on top of jar with ( on top if the paper ) one of those "stones" from mancala or the glass stones for in aquariums or vases ...or use small rocks from yard that you've cleaned with...your vinegar lol. Then when place in permanent bottle attach to a string around bottle neck ( or make a fancy label at that point). Or keep a pocket notebook. It's what I have to do.

5% acidity is great for cleaning but yes, if you want it higher than that, you need to distill it. I have yet to do it myself but have not seen a need for it either.

The only thing in the vinegar is what the vinegar was made from, I often use flowers and herbs to make vinegar and those are the ones I use in my hair, the lavender makes an especially nice smelling vinegar. I have several how to videos on making your own. I did not use any books in making vinegar but I did in learning what herbs are good for hair and skin

They did turn out much better but still did not stay real crunchy over the long haul even with grape leaves added in. Then again, I did not use pickling cucumbers

I use homemade lemon vinegar for mopping floors. Haven't had any ants since i switched from store bought chemical garbage to homemade naturals.

Date vinegar is delicious and date/ raisin too. I used dehydrated dates and no sugar as they are full of sugar.

I have some really crazy questions. Can you make cucumber vinegar? (or will you end up making pickles) Can you use dried or frozen fruits to make vinegar? I'm thinking dried you can because raisins are dried. My peach vinegar had sediment in the bottom. I gave it to my son to wash his hair with and am afraid if he finds bits of peach in his hair he will never try it again. I strained it twice but not through a cloth. Do you strain through a cloth? Do you ever have sediment when you use mushy fruit like peach? Have you ever made a vinegar that leaves a stain? I was thinking maybe berries would? Can you make beet vinegar and would that stain things red? I told you my questions were crazy ones. Can vinegar be made from pine needles (not dried up but, green ones)? Since you used juniper and cedar I'm guessing pine would work? How do you know what will make a vinegar? Is there a rule of thumb or - just anything in sugar and water turns to vinegar? Will just sugar and water alone turn to vinegar? Could you make vinegar from sugar, water and spices like cloves, cayenne ect? Would they burn your skin? How do you calculate how much you need? What do you do with the mothers when you want to use that vinegar? Don't feel any obligation to answer any of this - I know it would wear someone out. I was really just thinking/wondering things aloud.
Lots of questions but none of the them are crazy. I think cucumber vinegar would be a good one but I have yet to try it. I think I just might now that you have mentioned it. I have tried frozen fruits and they do not always turn out great. Blackberry vinegar is lovely and tasty but it does stain terribly so I stopped using it for my hair because it kept making stains on the tub where I keep the bottle, though it may be great for adding a temporary color to hair - I never happened to notice if it did that though. I believe I have made vinegar from dried herbs but other than raisins, I have not done any dried fruit, however, I think it would work fine. I think you can use anything you want that sounds good, the general rule is making sure you have plenty of sugar to compensate what is lacking in the items used. I would say go at least a half cup of sugar when using herbs, pine, or anything like that to get a strong enough vinegar to be multi purpose. I have been thinking one should be able to make vinegar with just sugar and water and that is another thing I have wanted to try. My guess is that it would be best to add a bit of vinegar with the mother, or the scoby mother, to it to insure it will ferment since your fruits, herbs, and such all have a certain amount of yeast that helps get it going.
Sometimes I just store the mothers in the jar with the strained vinegar, sometimes I toss them to the chickens.

Now I have another question. Does the vessel you make vinegar in have to be glass? My daughter just picked a huge amount of mint. Even after picking it from the stems I have 3 gallon jars stuffed with mint and I haven't even added the hollyhock flowers. Then I realized that I would have those gallon jars in use for the next couple months at least and I might need them for something else. I am putting them in ice cream buckets. I think it's OK because vinegar is sold in plastic containers at the store. I just thought I'd check with you in case you've researched this already. Do you think plastic ice cream buckets will be OK for making vinegar in?

I am constantly doing a bing watching of all of your videos and taking notes..have learned so much and putting your info to use..please write a book..would be the first to purchase but until then keep making your videos..have slowing working at a mature age to become more self sufficient..
I do get a lot of requests for a book but I simply do not have time do that, make videos, keep up on our etsy store, watch my grandbaby, and keep up on all my chores and gardening as well. I would have to give up youtube to pull that off and I am not willing to do that right now.

I use my vinegars for fermenting. A different flavor here & there for sour kraut or pickles makes a nice change, variety.

BTW- here in South Texas, Terry adds vinegar to the goat pen water tubs to keep algae down. It works and the goats love it.
Tyler Woods I've added it to the outside water for animals and it seems to help keep mosquitoes out.
Good to know I have started ACV in chickens water and I see less mozzi larvae by the time I need to empty water and am hoping for less algae.

Hidie, the new shelves work well in the corner. A note, the wall could, as well, support with more shelving for all your jars. Building in the wall space adds value. More shelves which hold to behold all your products. 🍻
Yes, but the wall directly in front of me when I am standing at the counter would not work to build on due to the pocket door on the other side. Free standing shelves, maybe but I do not want anything like that there as it would take up too much space. I need to keep that space for ferments and for work space

Hello Heidi, wanted to ask you? Have you ever made vinegar with mixed fruits, such as strawberries tops, apple skins and blueberries? I didn’t have enough of each of them and I wanted to get started so I mixed them in the same container added my sugar and water covered and well.... we’ll see where it goes. LOL "darn I forgot what this one is", this sound so much like me. I have been dehydrating everyday, I do try to limit to two things a day, but yesterday I had not jar one from the day before and I couldn't remember what it was. I had to think about it a minute but remembered it was blackberry leaves. At my age now, if I don't label everything from one day to the next I forget. Know all that junk mail you get? Take the parts with blank spots- even small ones & save those bits. Only takes a minute more than direct trash toss. Use those as labels. Put on top of jar with ( on top if the paper ) one of those "stones" from mancala or the glass stones for in aquariums or vases ...or use small rocks from yard that you've cleaned with...your vinegar lol. Then when place in permanent bottle attach to a string around bottle neck ( or make a fancy label at that point). Or keep a pocket notebook. It's what I have to do.

Is there a way to increse the acid for a more constrated vinager for cleaning?
Yes and I discuss that in my last vinegar making video. I am getting a much higher acidity doing it the way I do it now and it is great for cleaning
5% acidity is great for cleaning but yes, if you want it higher than that, you need to distill it. I have yet to do it myself but have not seen a need for it either.

The only thing in the vinegar is what the vinegar was made from, I often use flowers and herbs to make vinegar and those are the ones I use in my hair, the lavender makes an especially nice smelling vinegar. I have several how to videos on making your own. I did not use any books in making vinegar but I did in learning what herbs are good for hair and skin

How did your pickles turn out with the new stronger vinegar?
They did turn out much better but still did not stay real crunchy over the long haul even with grape leaves added in. Then again, I did not use pickling cucumbers
