    I worked at a restaurant the trick to top off at the end is 5 table spoon of ketchup and table spoon of dark soy sauce. It gives ketchup adds sweetness and the soy cuts down the sugar and adds umami flavor to it. It will taste like a restraunt.

    A more authentic way to make the Chinese tomato egg is frying the egg first, fry the tomato separately, then add the egg to the tomatoes and fry them together once more! Believe me it will be more delicious!

      Indeed,as a native Chinese,egg should be tender,not so fried.adding in sugar is also OK.

    I recommend heirloom tomatoes, so juicy, no water needed. We usually stir fry the egg first. It also goes with noodles.

    Filipinos (I'm in Tagalog region) would make something similar we call it Sarciado and most of the times we pair it with fried fish.. Affordable and filling dish.. so delicious! 😊

    Other than the various recipes, this is one of the classic Chinese dishes that's best prepared using a smoking hot wok, lots of oil, and msg. I've made this using different methods, Western nonstick pans, induction stoves etc. None of them resulted in silky smooth and delicate yet with somewhat browned layer of egg skin on the outside, accompanied with tart yet sweet saucy tomatoes.
    My tip is to ook them separately, first egg, then tomatoes, then add together. Optionall, add a dash of ketchup and a sprinkle of sugar in addition to salt, msg, and spring onions. No sesame oil as that overpowers the flavor. Control your heat. Eggs- high, tomatoes- med, together- low, basically just stirring them together in the end.

    I’m more of a fan of eggs being fluffy than being soupy when it comes to this dish. Balances out the textures and I know which part I’m eating. I don’t want to just eat chunks of tomatoes.

    Tips:
    I like to peel the tomatoes by quickly covering it with hot water until a very thin skin just slides right off.
    Add KETCHUP! It will add tomato flavor and make the dish better.
    Use sushi rice. Sushi rice or any round rice is the only rice i'll ever love, because of the chewiness and mild flavor.

    Ahhhh my favorite dish I have not seen or eat it after my grandpa has passed 😢😢😢😢 thank you for making this video know I will try to make it myself I know it’s good too yummy is like eggs last time I though it was mayonnaise until my grandpa told me to try it because I only like to eat some mayonnaise some of them I feel like throwing up I miss my grandpa. The ways she said I love this dish BUT NOT ALWAYS!!!!!!😂

    in my culture we have something similar but we add onions and tomato finely chopped and then egg scrambled we usually eat it with bread though but ive tried to with rice and its so good

    One thing I recommend is to fry the egg without stirring until it's a bit crispy then put tomato in, eggs will taste way more fragrance.

    We do that too, but we add red onions to it, we pour the scrambled egg, and put the chopped tomatoes, much smaller chops at the red onions, pepper and salt for seasoning, that's all

    😅 my recipe eggs, tomatoes and green onion season with salt, sugar and soy sauce only, a premium one for best flavor, very simple.
    Starting with kinda frying beaten eggs, use few drips of oil on high heat and make it fast, then put a side. Next on medium heat throw in half of green onion, after 1 minute throw in all the tomatoes then soy sauce, sugar and salt, add a little water and after another minute or two then throw in the fried omelette. Check the taste and throw in rest of green onion before turning off the heat.
    I like it for breakfast serve with steam rice 😁 I don't know if it's Chinese style or not, but yes plain and simple. Taste of eggs, tomatoes and soy sauce with nice smell of green onion, and yet so delicious...

    The only thing missing from this dish is some of the dried (then pan-toasted with a little oil) little anchovies (江魚仔), as a garnish. Hint, you can add the garlic salt to the anchovies, as you're toasting them, or not.

    I used to make it ...But i don't want chunky tomatoes so,i mashed it till it turns into gravy then add the eggs... and cooked it till most of the water vapourised!

    I'm Chinese and my dad makes this a lot when there is nothing to eat. He usually uses 1 egg and puts a bit of ketchup and lots of tomatoes, I don't eat it but i will eat the plain rice
