How to Make Perfect Angel Food Cake | The Stay At Home Chef

  • Angel food cake is light and airy and deliciously sweet. The perfect angel food cake recipe is also easier to make than you might think for the perfect sponge cake, every time.

    ✅Ingredients
    • 3 cups powdered sugar, divided
    • 1/4 teaspoon salt
    • 1 cup cake flour
    • 12 egg whites
    • 1/2 teaspoon vanilla extract
    • 1/2 teaspoon almond extract
    • 1½ teaspoons cream of tartar
    ✅Instructions
    00:00:20 - Using a tube pan for Perfect Angel Food Cake
    00:01:06 - Separate 12 egg whites into a large mixing bowl
    00:01:33 - Why use cake flour and powdered sugar for Perfect Angel Food Cake recipe
    1️⃣ 00:01:21 - In a large mixing bowl, sift together 1½ cups powdered sugar with salt, and cake flour. Set aside.
    2️⃣ 00:02:06 - In another large mixing bowl, use a hand mixer to beat together egg whites, vanilla extract, almond extract, and cream of tartar. Whip for 2 minutes. Slowly add in remaining 1½ cups of powdered sugar until stiff peaks form.
    3️⃣ 00:03:12 - Sprinkle some of the flour mixture on top of the stiff egg peaks and gently fold in. Repeat this process to gradually fold in all of the remaining flour mixture.
    4️⃣ 00:03:49 - Scrape into an ungreased tube pan.
    5️⃣ 00:04:17 - Bake in a 350 degree oven for 40 to 45 minutes, until the top is lightly browned and is dry to the touch.
    6️⃣ 00:04:30 - Remove pan from oven and immediately invert onto a cooling rack or by placing a bottle in through the center. Let cool in pan 1½ hours. Tap the sides and and bottom and gently remove the cake from the pan.

    I just put this cake in the oven. I usually use my grandmother's recipe but decided to try this one. Today is my mom's 82nd birthday. Her mom always made her an Angel food cakefor her birthday... now I make her one. Thanks for this recipe!

    I made this today using the leftover egg whites we kept aside after making Christmas cake. We thought of making it a tradition going forward to make Angel Food Cake every year using your recipe 😍😍😍 it was so so flavorful, moist, soft and so light! This is definitely a fool proof recipe! You CAN NOT go wrong with this if you follow the exact steps 😍🥰❤️

    I love this recipe!!! I have a variation of it to make a pineapple upside down cake also which is basically 1/2 of this recipe plus 1 beaten egg yolk folded in before sugar is added then add by folding in the dry ingredients. For the pan I use a large cast iron skillet in which you melt 1/2 stick of butter and dissolve in 1/4 cup of brown sugar as best as it will mix and dissolve(Hint; it won't all dissolve) then sit to the side and add your pineapple rings over the butter/sugar mixture, add in cherries and/or pecans or whatever else within reason that you like on top of pineapple upside down cake, then add in and gently smooth out the batter. Bake at 350 until skewer is clean and/or the cake springs back at you ......but skewer is the better test. Flip over by holding a large platter to skillet opening.... then flip and let rest at least 5 minutes before removing the skillet. Yum!!😘😘😋😋
    This makes THE BEST Pineapple upside down cake I have ever tasted and I get requests for it from people who know I make it!!! Needless to say, I never told many people before now, just close loved ones!!! So now you know you are a close loved one of mine!!!😘😘🥰🥰😍😍♥♥💖💖💝💝❤❤

    We don’t have cake flour anywhere near us not even online. Can I use plain flour and add cornflour? In the video you said not to but we have no other alternatives. Please advice

      I know this response is late, but perhaps you can use it later.
      Homemade Cake Flour
      Ingredients
      2 tablespoons (14 g) cornstarch
      1 scant cup (116 g) all-purpose flour
      Instructions
      Measure out 2 tablespoons of cornstarch and place it in a 1-cup measuring cup.
      Gently spoon all-purpose flour into the cup over the cornstarch. Don’t pack the flour down in the cup. Just lightly spoon it in until the cup will hold no more flour then use the back of a knife to level off the cup.
      Sift the mixture 4-6 times to thoroughly combine and aerate the flour. Repeat for every cup of cake flour called for in a recipe.

    what flour do we use??? can I use regular wheat flour??? angel cake it made of wheat flour or rice flour???

      The recipe calls for cake flour which is a finely milled and has a low protein content that makes it ideal for cakes.

      This is not a recipe I recommend doubling and they only make glass Bundt pans, not Angel food cake pans so it would be very difficult to get it out of the pan and there’s lots of opportunity for it to go wrong.

    I know you explained, but is there any possibility to make it without the pan that you shown us, many of us don't have pans like that😒 so plz, try and come up with a solution. Love to make it as its my daughters favourite cake. 👍btw.

    This sounds nice but I may have to cut the almond extract since my dad is allergic to nuts or anything flavored with nuts like peanut oil or even a nut flavored extract

    It is WAY too sweet. The recipe results in a nice fluffy angel food cake that taste like powdered sugar. When I made it, I definitely thought 3 cups of powdered sugar is a LOT of sugar! It is. Other recipes call for literally half the sugar than 3 cups. So unless you like cake that will make your brain bounce against your skull for an hour - cut the sugar back to at least 2 cups.

      I bet the other recipes you looked at called for granulated sugar. Powdered sugar is double the volume of granulated sugar so a recipe that calls for 3 cups of powdered sugar calls for the same amount of sugar content as a recipe that calls for 1 1/2 cups.

      I hate to break it to you, but I can guarantee that if it didn't turn out, it's user error and you did not follow the recipe.

      Lieya G Unfortunately this is a really finicky cake. There are several places where it can fail. Did the cake not rise or did it rise in the oven then fall when you took it out?
