Japanese cheeseburger combo / lotus root chips & calpico soda homemade

- Today’s menu -
[ homemade calpico ]
200 g yorgult
3 Tbsp lemon juice
100 ml honey
(+ water, milk, or pop 2 to 4 times as you like)
[ tomato mushroom sauce (can be used for pasta later) ]
3 garlic
1 onions
1 piece celery
Some shimeji mashroom, shiitake
A canned tomato (400 ml)
100 ml red wine
1 Tbsp worcestershire sauce
2 Tbsp honey
1 vegetables stock cube
bay leaves
parmesan cheese
salt & pepper to taste
[ stewed hamburger steak ] 4 servings
450 g meat (250 g ground beef & 200 g diced beef)
4.2 g salt (about 1 % of salt by weight of meat)
1 onion (caramelized)
2 Tbsp bread crumbs
2 Tbsp milk
1 egg
[ lotus root chips ]
season with salt

Your Japanese hamburger steak meatball is like our hamburger Salisbury steak. Except we cook it in brown gravy with mushrooms and opinions and do not put it on a hamburger bun. Instead serve it with or over mashed potatoes & a vegetable or green of your choosing. My husband and I love turnip or mixed dark greens cooked with a bit of bacon grease and other seasonings we like. Am excited to try your lotus root French fries!
I love that your daughter is always open to trying new tastes. She's going to be a food lover just like her parents! 😊
A tip: if you don't want to spend too much time scraping the tomato can, you can add the liquid inside (the red wine or stock or water) and swish or stir it around to get all the stubborn bits of tomato that won't come out, then pour into the pot. The inside of the can will be clean and you get to use every bit of tomatoes!

We ( ama, apa, brother and sister in law. ) I loved our visit. We loved watching everyone cooking types. And you remind of them so friendly. I know you're in Canada but you're AWESOME.!!!

I am so happy that you call it pop=) I live in Tennessee now, but I lived in Michigan before. I grew up calling it pop and everyone here says it's soda. I used to work at a restaurant and the amount of blank stares I got for saying pop haha
I grew up in California, but also now live in Tennessee. I've always called it soda (parents were from NY and PA), but I've heard some people here call it pop... maybe they're the ones from up north then.;)

The lotus root chips look delicious! I make a similar drink with buttermilk, lemon juice, and a little sugar. My Finnish/German host mother from my exchange year made it for me and I fell in love.

I love Lotus Root so much. I love that it stays crisp even in a slow-cooked stew!
Texture and taste-wise, it's very similar to Jicama (which is another root veggie lacks the holes). The only thing that throws people off about Lotus Root is that they can give off little "threads" when they cook in stews.
For people who've never had Jicama or Lotus Root, the flavor is similar to a potato, but the texture is similar to a crisp apple.
Lotus root has always intrigued me. I saw it years ago in a movie and I thought it looked so tasty. I've never had it though but I like to think that some day I will get to try it and many other Japanese and other Asian foods. Thank you for sharing. I still think you need to do a cookbook. ❤

Your hamburger steak looks so delicious! I make a similar mixture for American style Meatloaf that I cook in my slow cooker. I then cut that into thick slices and fry them in a small pan to become sandwiches. One trick that I use is that I break up dehydrated shiitake mushrooms in a food processor so that they are about the same size as your minced onion, and I use some dehydrated onions as well. I include those in my meat mix because those will absorb some of the juices as the meat cooks. It would work with your hamburger steaks here because they are large and cook for a long time as well, though I wouldn't use only dehydrated mushrooms and onions. :) Probably just a couple of tablespoons in the meat mix. (I also like to make meatballs the same way, and I often freeze those either raw or cooked so that I have them for later.)
