Rajgira Ka Halwa
Ingredients:
Amaranth flour (Rajgira Atta) - ½ cup
Sugar - ½ cup
Ghee - ½ cup
Water - 1 cup
Toasted mixed nuts - ½ cup
Cardamom powder - ½ tsp
Method:
-Heat ghee in a kadhai. Once melted, add rajgira atta and cook until it turns brown and releases a nutty aroma.
-Slowly start adding water while continuously stirring. Be cautious, as it may splutter.
-Immediately after the water, add the sugar and mix well.
-Cook until all the water is absorbed, and the halwa starts leaving the sides of the pan. You will also see that the ghee has separated.
-Add cardamom powder and mix well.
-You can enjoy this right away, but I have served it in shot glasses.
-Start with a layer of chopped toasted dry fruits, followed by the halwa. Top it more nuts.
-Serve immediately.
