Instant Leftover Rice Dosa
Ingredients
For the Batter:
Leftover rice - 1 cup
Semolina (sooji/rava) - ¾ cup
Curd (dahi) - ¾ cup
Water - 1 cup
Baking soda - ¼ tsp
Salt - to taste
Ghee
For the Toppings:
Jeera Aloo Sabzi
Chopped onions
Chopped tomatoes
Chopped green chilies
Fresh coriander leaves
Method
-Add semolina to a blender and blend it lightly.
-Add the leftover rice and curd to the blender and blend into a smooth paste. If needed, add a little water to adjust the consistency.
-Transfer the batter to a bowl. Add salt and baking soda, and mix well.
-Heat a tawa (griddle) and sprinkle a little water to cool it slightly. Wipe it clean.
-Take a ladleful of batter and pour it onto the center of the tawa. Spread it gently in a circular motion to form a thin dosa.
-Drizzle some ghee around the edges and sprinkle malgapodi powder on top.
-Add the jeera aloo sabzi as a filling in the center.
-Cook until crispy and serve immediately with sambhar and chutney.
For the Uttapam:
-Heat the tawa and pour a ladleful of batter onto it without spreading too much.
-Add ghee and your choice of toppings (onions, tomatoes, green chilies, and freshly chopped coriander leaves) over the batter. Gently press the toppings so they stick.
-Flip the uttapam carefully and let it cook on the other side.
-Once cooked, serve hot with sambhar and chutney.
