  • Today's topic is perfect for those who are new to BLE! Becky from the BLE social media team walks you through one example of a complete day's menu plan--breakfast, lunch, and dinner. Three meals, one BRIGHT day! (Including some whole food plant-based variations!)

    TODAY'S RECIPES
    Breakfast:
    8 oz plain Greek Yogurt
    6 oz cherries
    4 oz cooked oatmeal
    Cinnamon & nutmeg to taste
    Stir together in a bowl and enjoy!
    Lunch:
    6 oz peppers, cucumbers, and snap peas
    2 oz hummus
    1 hard-boiled egg (sub another 1/2 WFPB protein if desired)
    1 apple
    .5 oz raw almonds
    Dinner:
    16 oz spiralized carrots and marinara (counts as 6 oz veg + 8 oz salad + 2 oz condiment)
    4 oz flour-free meatballs
    1 oz fresh mozzarella

    I am trying to watch and read everything I can about BLE. I will be starting in March, doing the Boot Camp and I want to wrap my mind and prepare myself for this amazing journey.     I am new. I get so overwhelmed when it comes to anything in the kitchen. TRUELY!!!! so with that said It's helps so much to see the meal preps and the amounts. I think you from my non-cooking heart

    Thank you for this video! It's very helpful, and I hope there will be more like it in the future. I love the "Not your mother's meatloaf" recipe and will try making it as meatballs now. That's a great idea. I also want to try carrot noodles! And I use Barilla marinara sauce.

    this is so very helpful to get into a routine, daily. i get really stumped for dinner and 'fall off the wagon'. thank you! btw, rao's marinara has no sugar. i'm a beginner so i really need a routine and this will be great.

    Prego Marinara, Simply Ragu, and Classico Tomato Basil (I think) are all sugar free mainstream, affordable sauces.

    I was so confused with the portion for the oatmeal I cooked a huge batch and then weighed out 4onces and then I saw only one once so did I over eat or did I do ok please help the food prep is my hardest part

      Hi Carol, 1 oz. measure is for dry oats, 4 oz. measure is after you cooked it. It sounds like you did it right. Sometimes people find it easier to make large batches and measure after.

    I think I just need to copy this directly into my meal planner. 😍
    I’ve had good luck with Newman’s Own and Barilla for premade marina. I don’t recall if they’re completely sugar-free or just not in the first three ingredients. Also, I can’t vouch for all the varieties.

      We drink water and tea! Sometimes sparkling water. Sometimes water with a little lime squeezed in for a hint of flavor. :-)

    What kind of meatballs are those? 9-10 of them for just under 4 oz, wow!!! When I weigh out 4 oz cooked ground beef its only enough for a small patty, maybe 4 small meatballs. Or even vegan impossible meatballs, I only get 4.

      Hi Jasmine! The type of meatballs Becky used were Rosina Gluten-Free Meatballs. She says she believes this is a regional brand that's available where she lives. This brand was flour-free, but since the filming of this video, they have changed their ingredients list and are no longer flour-free.
      You might be able to find a flour-free brand in your grocery store. A good tip is to start with gluten-free brands, then check the ingredients for flour. If there's ANY type of flour (including rice, soy, coconut, almond, etc.), they aren't compliant.
      Or you can also make your own meatballs at home that are compliant! We've heard some folks have used the meatloaf recipe from the Official Bright Line Eating Cookbook and formed it into balls instead of a loaf.
      These meatballs that Becky used are rather small in size. After cooking, she weighs out 4 ounces for her protein portion. She found this was usually 9 meatballs. 🧡

    Greek yogurt has sugar it in. Most sugar is added to yoghurt...

      Hi, Wendy! There are many types of yogurt that do not have added sugars or sweeteners. It is typically a plain variety. 🧡

    8oz yoghurt, 6oz fruit, 4 oz grain? For breakfast?!?! That's over a pound of food, fer gods sake... Then the same for lunch.. Then the same again for dinner, or even more... That's huge.... What about fish? Tinned wild sardine, mackerel? Avocado for fat, nuts,

      Hi Penelope. Our meals in Bright Line Eating are abundant and filled with fresh, healthy, real, whole food. And we don't snack and graze between meals, so each meal is large enough to sustain us for several hours.
      We do not eat the same meals at breakfast, lunch, and dinner. Lunches and dinners contain vegetables and fat servings. Fish can be used for any of the protein servings throughout the day, as well as a number of other protein options, such as beans, beef, chicken, tofu, etc. Avocado, olives, olive oil, nuts, seeds, and nut butters are all options for fat portions.
