    Hello Chef ! I'm happy to see you back online. Looks delicious! One question I have is you said before you cut up the dow into balls you let it rest "about" a day covered. I'm wondering, do I do that on the counter in the kitchen at room temperature, or, do I put it in the fridge overnight 🤔??? Chef Beppe, Lake Havasu, Arizona.

      Thanks for asking.
      I usually let it rest for couple of hours outside the fridge, and after that overnight in the fridge
