  • Fast, easy Hot Pot for One. Tender pork belly cooked in a delicious and savory katsuo dashi with napa cabbage and enoki mushrooms. Inspired by Midnight Diner Japanese drama.

    Ingredients:
    For Katsuo Dashi
    1 cup katsuobushi (dried bonito flakes) (1 cup = 10 g)
    2 cups water (1 cup = 480 ml)
    For Hot Pot
    2 leaves napa cabbage
    4 sliced pork belly
    1 inch medium firm tofu (1" tofu = 60 g / 2 oz)
    ¼ package enoki mushrooms (1/4 pack enoki = 60 g / 2 oz)
    2 tsp sake
    To Serve
    Ponzu
    Shichimi Togarashi (Japanese seven spice)

    I really like the Midnight Diner series too! Thank you for the simple recipe ☺️ It inspired me to make my my own version as I didn't have enough katsuobushi. I used part katsuobushi, dried anchovy, and thin onion slices and ginger to make my broth. I only had king oysters so I julienned them to take the place of enoki mushrooms!

      AJ Siytangco The series has 3 seasons actually. Netflix bought the rights to the 3rd season and promoted it as a "Netflix Original", hence, in Netflix it starts at season 1.

      So happy to hear you enjoy the show too! A lot of people told me about 孤独のグルメ. Maybe I will have to work on it one day. Yes you can use katuso dashi powder too, BUT as you can see, there are not "seasonings" and making GOOD dashi is the key to this dish. I highly recommend making your own katsuo dashi for this recipe. You'll know the difference when you compare the two (dashi powder vs. homemade dashi). :)

      What's fresh ramen stir fry? In Japanese cooking, "ramen" is usually in broth, not in stir fry. Except for Cold ramen, or dipping ramen. When I hear "stir fry" I can only think of yakisoba.... If you have a picture of a dish, can you send me?

    I just made this in a 3 l. dutch oven pot, doubling the recipe, i.e. for two people.. It worked just perfectly. Certainly not the last time we will be doing that. Instead of meat in the pot, we cooked a couple of small pork cutlets on the side, using your Tonteki recipe marinade and method (also an excellent recipe) with a homemade Ponzu, again following your recipe. All was just excellent. It is such fun to have been inspired by the series on Netflix and now able to follow up with cooking the dishes too. Great fun. especially as I am not a good cook for the most part. You made it easy enough. Thanks.

    Hey there! So, it’s very difficult to get bonito flakes near me. It’s also difficult to get dashi. I have the rest of these ingredients, but would you have a recommendation for a different stock?

      Hi Emcee! If you want to keep it "authentic" Japanese hot pot, I won't suggest chicken/beef/vegetable broth for example... You could, but it won't taste Japanese in this dish. Now, if you can't get bonito flakes... then you can use kombu and dried shiitake dashi? www.justonecookbook.com/how_to/how-to-make-dashi-jiru/

    Oh I have a questions about Japanese mushrooms. How do you clean? (Like does it need to be washed or soaked or needs vinegar to lift dirt off?) And how do you store for freshness?

      I'm happy to hear you enjoy the show too! For enoki mushrooms, I cut off the bottom and quickly rinse under cold water before I use it. If I'm not using all of them, I usually keep the bottom attached. So I tear with hands the portion I use, and keep the rest in a bag and store in the fridge. I recommend using it soon though. :)

    I'm thinking, can we add the Pork belly at the last part after U take the hotpot from the stove? This way, the Pork belly won't be overcooked.

    I've made so many of your recipes!!! Are there any alternate ingredients that are ok to use? I'd like to change out the mushrooms if possible? Also does this work with other meats as well?

      I'm not Nami but is it because you don't like mushrooms, or because you can't get that variety ? (other types of mushroom work fine). In any event I think Japanese hot pots work well with many different vegetables (and meats).

If you have any specific ingredient you want to put, let me know - I can help you if it works or not. But most vegetables and mushrooms work just fine.       You can use one more time, but the second dashi (we call it "Niban Dashi") is less refined so use this dashi for some dish that you will season with other condiments.       Probably you will need to go to Asian grocery store. I have a TH-camr friend who cooks Malaysian food and she said she can buy most of things in Asian grocery store in Frankfurt.

      Yup, you can find a single serving one at Daiso if you have one near you.
      There are also a few on Amazon as well, but I don't know if they're single serving or more.
