Not sure what the term for it is, but does it do that thing where it plays the note louder/stronger if you press more forcefully? Or is the volume and tone uniform throughout

Yes this is louder and quieter depending on how you hit the keys. It's not as sensitive as a real piano, but yes, it does replicate that fairly well.
