Ingredients:
Black sesame praline:
- 550 grams of sugar
- 660 grams of black sesame seeds
Black sesame ganache:
- 180 grams of praline
- 420 grams of double cream
- 60 grams of milk
- 4 leaves of gelatin (6.4 grams)
- 200 grams of dark chocolate
- 180 grams of double cream
Sesame cremeux:
- 300 grams of double cream
- 180 grams of praline
- 30 grams of lime juice
- 100 grams of egg yolk
- 3 leaves of gelatin (4.8 grams)
Blackberry broth:
- 900 grams of blackberries
- 90 grams of sugar
- 1 lemongrass
Blackberry jelly:
- 200 grams of blackberry broth
- 1 gram of agar powder
- 2 leaves of gelatin (3.2 grams)
Blackberry sorbet:
- 860 grams of blackberry juice
- 190 grams of sugar
- 120 grams of glucose
- 15 leaves of basil
Black sesame crumble:
- 100 grams of black sesame
- 100 grams of sugar
- 100 grams of butter
- 80 grams of flour
- 2 grams of flaky salt
- 40 grams of melted dark chocolate
Sesame crispy:
- 100 grams of melted dark chocolate
- 80 grams of sesame crumble

hi jules! i thought of an interesting way to expand your content, what if you made a series basically coming up with one of your amazing recipes on the fly and going through trial and error until you reach the end product (almost like gourmet makes on the bon apetite yt channel?) i think seeing your process could help aspiring cooks better understand how to make their own recipes, and it would also introduce a more ‘down to earth’ aspect where we can see more of your personality. i would also recommend starting a patreon! i’m very excited to see where you’ll go from here

Everything looks very nice, but the question is: Does it also taste good? Much of this "haute cuisine" is just nice to see but nothing really behind.

You are missing something that make don't go viral despite the good work that you make and that for 2 reason the recipe that you make are low quantity we don't know what are you cooking and lastly we learn recipe but not information like why you do that with that and why are you baking that and what it taste like, your video are like cook book but in video I hope that you read my comment because I want tip and trick, and recipe that we can afford
Bonjour chef, merci pour vos vidéos et ce somptueux dessert, le pas à pas est vraiment bien clair. Pour le moment, je voudrai simplement faire des bonbons en garnissant des coques en chocolat avec le praliné sésame. Ou le tabler pour l enrober. Pouvez vous me dire ce que je dois y rajouter comme beurre de cacao et comme chocolat, est ce que le sésame se marie mieux avec du chocolat noir ou au lait ou blanc? My Sorbet is melting so fast, can anyone tell me why??? In the video (and some others) it is easy to plate and eat without melting....

Hi Jules, great videos, very inspirational, althoug I'm a chef myself. Question: your using alot of doublecream, but in your videos the cream looks rather liquid. Our doublecream has almost the consistency of mascarpone. Now how many procent of fat contains your doublecream. 45%? Thanks for your answer and keep on doing what your doing best.......

Does anyone know the name of the grinder?
I use a twin stone from 110%chef, it’s around €300. Love using it, but it was pretty hard to get it. Had to wait 4 months for it 😂
