Pasquale is the best Italian chef on you tube, I thumbs up before I watch the video & can change that but never have, I do that on every one of his videos,here in Kentucky we call these open face omelets as everyone is Irish or Scottish or a mix & we have no Italian folks or restaurants but this is an outstanding recipe, actually a budget meal for us as we have free range chickens & eggs are free to us plus many veggies & raise livestock, God Bless everyone & please stay safe

Pasquale, what a great recipe. Frittata is a weekly dish in our house, but I've never made it with Italian Sausage. I followed your recipe but only used 1 tbsp of EVOO and instead of Mozzarella I put in a third of a cup of Pecorino Romano. I added a cubed red bell pepper and a small onion. Topped it with the tomato and fresh basil. It is fantastic.
Really really good. It can be even simpler. No need to pour the filling out of the pan, to cook the frittata on the stovetop, or to wait to put on the tomatoes. Simply leave the cooked filling in the pan, pour the eggs in, immediately put the tomatoes on, and pop it directly in the oven. It will come out great.
