ADDRESS: Xeo Sin Chai Village, San Thang District, Lai Chau city
🐃SMOKED BUFFALO MEAT: Mix together minced ginger, chili powder, MSG, Thai pepper, salt and ground pepper. Rub the seasonings on 2 parts of the meat. Squeeze the meat and then let it marinate for one hour. Lay it flat on the racks and smoke for 10 hours. Hang the meat for 10 hours.

🐔SAUTEED SMOKED CHICKEN: Cut the one-week smoked chicken into bite-sized pieces. Heat up the oil in a pot then stir-fry ginger and chicken. Add water. Season with salt & MSG, then continue stirring for two minutes.
🐃ASH-GRILLED SMOKED BUFFALO JERKY: Ash-grill the smoked buffalo jerky for 15 minutes. Use a stone to smash the meat to get rid of the ash, and tenderize the meat. Tear the meat into bite-sized pieces. Serve with dipping sauce made of Thai pepper, salt, lime leaves, MSG & water.

Biltong is so good, though. I'm Scandinavian and a friend of the family regularly went to South Africa to see relatives and each time before he left, i asked him to bring home whole pieces of Biltong :)

I love how the restaurant owner kinda panicked and stopped them as soon as she realized that Sonny and Andrew actually were going to just straight up eat them alive, thrashing and mad as hell because they thought that was how it was done there xD. The sheer relief on their faces after that was just priceless.
Don't wanna destroy your fantasies but that part was obviously staged. They never intended to eat but only pretended and the women's reaction is more amusement about the act than genuine worries. It wouldn't make any sense either since they are professionals. You just don't eat a living creature yolo. Even if you aren't a professional. Especially in another country.

We called the little water centipede a "hellgamite". I used to fish them out from under rocks in the Guadalupe river in center point Texas. The best fishing bait I have ever used in my life. They would attract pretty much every damn fish in the river. Bass, catfish, karp, perch, turtles, you name it. I've never seen them in any video till now over 20 years later.

I absolutely love this show. Sonny is like my generations comedic Anthony Bourdain. Your insightful dialogue and what you gain from your experience with food and culture very much reminds me of him. I'm Thai tribe which one of 54 ethic groups in Vietnam. Specifically, I am the Black Thai. In our tribe language we call this animal is " GIA TỚ'.

I think that was a direct translation from vietnamese if the person does not know english, so it sounds awkward. The same will happen with "dolphin," as, in vietnamese, dolphin is called cá heo which is terribly translated into "pig fish" (cá == fish, heo == pig).

Where I come from, southern Indiana, those are not called centipedes though they may resemble them, but are known as hellgrammites. They are the larval stage of the dobson fly. They are found under rocks in rivers and we use them as bait. They are the BEST bait to use in the river to catch catfish, perch, smallmouth bass...you name it!
I’m currently using a language exchange app where I’m currently leaning Vietnamese. I cannot wait until I’m able to finally go to Vietnam once the restrictions lift.

Those "water centipedes" are called "Helgramites" here in the northern US, and are sold at many bait shops for fishing for smallmouth bass.
