Kevin (black guy, beatboxer, sounds and looks like a preacher or choir director in the first scene) is a Seventh-day Adventist, and I believe he had originally intended to become a missionary after medical school. He gave up both medical school and the plan to become a medical missionary when he joined Pentatonix, but he regularly posts religious content, and I believe he's done so ever since they were Babytonix, as they were in this video.
yes, they tweaked some of explicit lyrics of the original. regarding church at the start, Kevin (beatboxer) is very religious so one reason for church location is that, other reason might be churches have great acoustics so they are often used for classical concerts and Kevin is also classical cellist

Pentatonix tries to keep their songs at PG-13 level at worst, so yes, they do change the lyrics occasionally to tone them down a little. Their cover of Thrift Shop (another Macklemore and Lewis cover) also modifies the lyrics slightly - but unless you're very familiar with the original, you'll never even know it. And it's a hoot - but make sure to stay tuned for the outro!
