She’s so precious. I want to hug her! Honestly I want to hug every grandma featured in this channel for keeping the traditions alive, for going through hard time during wars, for sharing their life experiences and recipes. Thank you Vicky for allowing us to e-meet these amazing women!
Bravo Maria, una ricetta meravigliosa, anche io faccio la pasta così. Christine ti augura buona salute e una lunga, lunga vita. Cordiali saluti da Vienna😘😘😘😘😘😘👍👍
Maria doesn't look anywhere near 90 and she seems like the sweetest spitfire, Thank you Maria for letting us In your home and sharing your & Laura's knowledge!
Really enjoyed this video. Maria is a treasure, and I am certain her fettuccine with olives and tomatoes was superb. The olive harvest time portion was interesting and really defined how Maria and her past is a continuing tradition today.
90?? No, no way, she looks barely 65, not 90 years old 😯 I am truly amazed how Italian nonne just don't seem to age! I think will try making this recipe for Xmas.
Another beautiful video. Maria at ninety is hard to believe. With her own wine and olives may she live even longer so she’s can share her gifts with her family. Oh, and the sauce looks amazing, too. Merry Christmas and thanks again for a great episode.
Maria stole my heart with her sweet personality…what a lovey!! That simple, fresh sauce lets Maria’s beautiful fettuccine be the star of the meal. TFS and Merry Christmas to all! Sharon🤗♥️🍝🎄
i spent time in rural Spain back in 1991. i was fascinated by the different olives offered at the corner bars/tapa restaurants - each made by the owners. all a bit wild and tannic with roadside herb mixes. i wanted to do an ethnographic survey of olive processing methods in Spain for a PhD. there's still time, but who needs the PhD!?
Many Many Thanks for Nice Video,,,,i appreciate soooo Much . I love seeing you in the video ! tasting the food and with Staff Makes it very human and closse to the ❤❤❤
All these ladies had difficult lives but became such rich women ✨✝️💕🙏💕🌹🌹🌹 That pasta and olives will be something I will never taste in my lifetime 🤔🌹🌹🌹
Olive experts! I feel I learnt something this episode. I'm also sorry to hear Maria lacked living female relatives and had to make her own bread during the war, you feel that she remembers every oven burn on her six-year-old arms.
❤❤ Thank you, Vicky and crew for another wonderful video. This was so interesting and educational. I will definitely attempt this recipe. It looks luscious!! Have a Blessed Christmas and a Happy, healthy, prosperous New Year!! Sending prayers and love to our wonderful Vicky and Pasta Grannies ❣🙏❤🎄😊😘
Vicky- How long does the egg dough have to rest before rolling & cutting it, & do you leave it out at room temperature or refrigerate it? Thanks. Have a wonderful holiday season & a happy & healthy New Year. Trascorri delle meravigliose festività natalizie e un felice e sano anno nuovo.
After the dough is kneaded, it should rest 30-90 minutes for the gluten to relax. It rests at room temp, but can be refrigerated over night...always wrapped air tight when resting to avoid over-drying. She lets it dry after rolling, before cutting, and this helps keep the pasta from clumping, sticking. Should dry at least 30, but depends of the humidity, air temp, and how moist the pasta is to begin with... Hope this helps.
@@michaelquinn3878 Thank you so much. They usually say they let the dough rest, but this time they didn't, & I wondered if it would be different being there were eggs mixed into the flour.
I'm a recent subscriber and I absolute LOVE every Nonna I watch. Just a doubt (and a curiosity): why do most of these Nonnas wear the same style apron? With their names embroidered
A personalised apron is an ideal Christmas or birthday gift! Plus there are plenty of old fashioned haberdasher shops which offer the service. 🙂🌺 best wishes, Vicky
I stopped the video when you mentioned that your subject is in “Eetree” (sp)?, famous for its olives. Knowing I had the town name and spelling all messed up, I have hoped this video’s stnuuning video graphics would ensure I would better understand this neighborhood. Instead, 10 minutes are scanning the may, I realized the are wasn’t on this map. A classic place, known for its olives and pasta should be praised in all local maps educating others about culture and cuisine.
I mean if the reason this video is viral is because a 90 years old can cook pasta by hand. Then my niece who is just 1 year old walked upstairs from the basement to the 1st floor without any help.
Complimenti Signora Maria, anch'io condisco e conservo le olive appena raccolte, e sono una Ragusana che vive in America.

Thanks again for a charming video. I use a cherry pitter to pit the olives, but I like her method, too.
I was wondering if fettuccine was an American thing. We seem to have our own Italian Food. This is a great channel for the Original Italian Style!
Buon Natale a tutti ! 👋 🎄 Merry Christmas to everyone ! 🎄 🪅
Paula Wolfert calls them green-ripe olives, lovely
Marvelous
I wish I could try her olive oil!

What was that wooden tool that they were using with the olives that you showed at the end of the episode?
