This is my how to video for The Best Non-Traditional Stew Peas with Pigstails
Hope you all get to try this one too. Jamaicans have a unique way of doing everything so look at how I make this down home favorite. Many people may not use all of the ingredients that I use but I try to use whatever is available in my local area to make great dishes. Hope you get to try this flavorful dish in your neck of the woods.

2lbs Chicken Foot
2lbs Stewing Beef
3lbs Pigstails
5 cloves Garlic
1 small Onion
2 stalks Scallion
1 stalk Celery

My sister's mother in law was from St. Catherines, JA, and I had the privilege of becoming acquainted with many of the delicious dishes that you prepare on you tube and have been a fan of Jamaican food for nearly 17 years now. I had a good time sampling her food for the three months when she came over to Florida. I will miss her and her excellent cooking. She has gone home to rest with Jesus now!! RIP, Mother Harrison!!

Phillip, I cooked the stew peas this past weekend and it was sooooo good, i could not stay out of the pot!! Yummy!! I will not prepare Kidney Beans no other way, except the Jamaican way from now on. The coconut milk made it so rich and flavorful. I was always hesitant about using scotch bonnet pepper but I sliced it carefully and made sure that i did not include the seeds. I used the beef and pigtails, but could not find any chicken feet. Nonetheless, this is comfort food at its finest!!
I always luv when you merge your two cultures Jamaican and U.S. to create your new version of fusion food. Cooking is also experimenting to find and take advantage of new flavors you can add to something while honoring tradition. This is partly how new flavors and dishes are made everyday by using or doing something in a slightly or bold different way. If you go back 150 years and bring someone who was a great cook back then, they would just about say almost nothing we make today is "traditional" or just like they made it back then. Things improve and evolve over time. Keep experimenting with new flavors. As for Fennel, I luv it too. Fennel Rice is a thing in my kitchen.

Love this....the real Jamaican ting.I truly love the fact that you mention things that you have added that is not traditional like the celery and the black bean. Many say they are cooking Jamaican food and add things that is not traditional and acted as if it is norm...BUT...BUT...I especially LOVE DAT YU USE DI PIGS TAIL!!!!!!MAD!!!!!And di Chicken Foot!!!!...Real Jamaican Cooking!!! Yes sa yes sa that was perfectly done, I do agree that the brassing of the meat gives the meat its own flavor in the stew, my added touch now is to put in frige chill down and reheat next day oh what a difference.
Oh yes left over stewed peas is fab!! You can add water and turn it into peas soup too! Just put on some yams and dumplins to boil then add them to the pot when the soup is hot!! Sweet!!

Man it looks so good...I'm a black American women and a young Jamaican girl moved into my building...I'm old enough to be the Childs mother but we became friends she loved my American cooking & I loved her cooking but one Sunday she made this....now I'm kinda funny about. Food when she told me everything that was in stew peas I'm thinking I'm not gonna like this so I told the child give me just a little...i thought I was going to ease up my apartment to throw it away...but I think she knew that she said stay at her
place & eat it ...long story short ate a spoonful of that food it brought tears to a big girl eyes that's how good it was she had to give me little more...never tried to make it myself but I think I'm gonna try.today

I am Haitian and a good cook to👍🏼first,I like your combination of beans,it’s colorful👀 and exciting to dig in;i use my pressure cooker also,depending of taste I Would use a salty turkey neck mix with stew beef.I will try to add coconut milk.the dumplings,the hot pepper,Tyme,garlic,escalions (yesss)they will put a kick on your peas soup👈🏼with the white Jasmin rice aside.It was a pleasure to watch you cooking👏👏🥄🥣Lol!waiting4 my soup

Recently I watched your wife make liver, and it looked delicious and it just so happened that I was fortunate enough to visit another sister's home that evening, and her husband is from the caribbean (Haiti) and had prepared liver for dinner and cooked it the same way that your wife did and it was very delicious!! So I guess that is the way that Caribbeans prepare it!! I just became one of your new subscribers. I like your presentations. You do a great job!! How long have you and your wife lived in Florida? I reside on the Southwest side, Fort Myers. Not sure if you have ever heard of the place, but I was born here. I'm moving this summer to Orlando, Florida! YardieBelly, is the powdered coconut milk the preferred one to use in the stew peas? I've actually never had this, but my, my, my...it look sooooo good!!!! Also, I'm thinking that oxtail is a good substitute instead of the beef.
I thought I would like this until i saw the beef, I was really hoping to see a nice pigtail and bean stew. Oh well I try my way and see how it works out.
Debbie Ramnarine The good thing about this dish is that you can lef the beef out!! Try it without the beef and tell me if you like it! I'm sure you will!!
This look delicious! I'm going to make it tonight. A couple questions for you? Is it okay if I do not use the coconut milk? Also my pigtails do not say salted on the package label, should I salt them? Maybe they are salted but just does say.
sheila osei The coconut milk makes the dish hun, If you don't use it then the flavors won't be the same as the dish is made for that flavor. You can however use the fresh pig tails instead of the salted. You will need some element of smokiness to the dish so try smoked pork chops then. Just a little so it doesn't overpower the dish. I cannot tell you what could be a good substitute for the coconut milk as that is an essential ingredient.
Yes you are so right! I just finished eating it. I did use the coconut milk but only a half can. It was delicious!! Taste just like how I had them in JA. I also soaked the pig tails in salt water for like 8 hours and it gave them a great taste. I will definitely be making this a lot more often. Please post more cooking videos : )

gd to experiment with food .there is a brand of coconut milk powder or liquid the brand is Thai kitchen.basic coconut and preservative that's it grade full a chemical. like most of them

ronnie horn Spinners are little logs of flour and water dough, You just make the dough and then roll it in your hands in a long shape and drop it in the pot. It's called spinners because it spins in the palm of your hand before dropping in the pot. It helps to thicken the stew.

Sorry for the late response, Adrian thanks for filling in for me. Jamaican stew peas is the vehicle for transporting any meat that you desire to culinary heaven. You can put so many different kinds of meats in this dish it's amazing. Oxtails, beef, chicken foot salt pork, chicken turkey necks and wings are just some of what has been used to cook stew peas back home. It's a necessity type of thing so go ahead and do your best girl and hope it's tasty

How do you make spinners? I am a Black American who loves Jamaican food.
Spinners are just pieces of dough that you roll into tube like shapes. the ingredients are water flour and salt. You can be as creative with the shapes as you like. Have fun making your crazy spinners!! lol!

This video was done a long time ago, we have grown since then so now we use whole wheat four mixed with cornmeal and garbanzo bean flour
Do you have to use salted pig feet
We don't use pigs feet, we use the tail and no it doesn't have to be salted. I use chicken foot and stewing beef too. You can use turkey neck or any meat for that matter
Yardie you know you ting. One suggestion that you could try. Cut up your garlic and skellion (green onion) and fry it in a likkle oil before you add it to the stew peas. It gives it an awesome flavour. Like how you add the chicken foot and I will try that. looks like you wifey come home before you done and you didn't surprise her you put her to work dwl

Jamaicans CAN teach Americans and other people about the infusion of spices and seasonings because we ARE known for the deep, rich flavour and taste of our dishes I am surprised that you had to learn that away from Jamaica.The stew peas and rice look really delicious though.

Your video mentioned the coconut milk, but you didn't show or mention how or how much to add. You also didn't mention thickening the stew, yet yours looked thick and glossy. Essential details for a beginner.
I normally don't measure a lot but I use at least one package or have can of milk and the spinners actually thicken the stew quite a lot! I allow it to cook to the point where I'm comfortable then I turn off!
I'm jamaican and love stewed peas. The black bean is used in a portuguese/brazilian dish called Feijoada which is extremely similar to stew peas....nice recipe still but the black bean kinda tek weh the tradition a bit
reticenceof.pain I was going for that, My ideas is to find ingredients that are available in your local area and make a fusion with them. Miami is latin influenced so hence black beans
Phillip Allen yea i got ya! i lived in brazil for a while and i know many of them try to migrate to Miami in specific . You should probably try Feijoada it's delicious too but i think stew peas is better. However, re what is found in the local store, Florida in general has a huge Caribbean influence (with tons of jamaicans) so you can find almost anything you want for jamaican dishes in the local area. but as i said i love your recipe because the chicken foot addition is really authentic and reminiscence of home n my mom almost always puts it in it. This recipe is one of the best for stew peas recipe on TH-cam but i am not a fan of the black beans in it jus coz of flavour. But big up yuh self still really good recipe.
