What I love about the Jamaican culture is both man and woman learn how to cook. Unlike in Africa man that learn how to cook are laughed at. The father's yell at their sons who like being in the kitchen with their mother. In Africa a women's job is cooking and taking care of the home, while man go out to work and pay the bills. So if you a women in Africa and your elders don't teach you how to cook it's known they want to destroy your life, because no African man will marry a women who can't cook. My aunt did that to me thinking I won't ever find a man that would not be with me. We live in computer age and book age. I learned how to make food from all over the world and not just Ghana because of this computer age we living in. God bless people like you who love to share what you enjoy doing. In Jamaica, I swear, the men are the best at cuisine. Both my parents taught me how to cook but my dad is truly a yadbwoy since he's from saint mary and my mom was from Spanish town. My mom was more diverse in her cooking but my father ONLY cooked Jamaican. Even the way he cooks Mac and cheese is the Jamaican way. I learned mainly from him and get tips all the time from him. ONE LOVE 🇯🇲

You may have a smaller audience than mosy cooking channels on TH-cam, but you and your wife dynamics in the kitchen is sure damn funny to watch and listen to. And you put allot of love into making everything you make. If I wake up out of a dead sleep and started watching you both cook, i'd know you were from the islands by just the way you peeled up the onion piece by piece at the pot. Only island people i know do dat. That stew is damn delicious and i dont have to taste it to know. I have to find me that Citrus Marinade and the Moores one you use as dont have those. The Ketchup part too funny and that Oxtail Marinade is Wicked!

Melissa Connor the meat should only be in for about 15 to 20 mins. You dont really need to pressure it. If you are patient you can just braise it in the pot until tender. just keep adding water to the pot so it doesnt dry out. The pressure cooker can help but it can also over cook the meat as in my case, I did mines for a little too long. Glad you enjoyed my video. Hope you subscribe for more recipes

I am looking at your video and want to know which "Americans" do you mean...? Because Afro-Americans have been using "Browning" forever. We use "Gravy Master" and "Grace's" that's something you don't know about. But long before that we have been using soy sauce to brown our gravies and meats. I'm always offended when black people from around the world say "American" in reference to Afro-Americans because we all got the same style of cooking from AFRICA we just incorporated the flavors from the Countries where we spent centuries being Slaves. Based on my limited experience I know most soul foods uses some form of "browning" agent so I just wanted to educate those folks who never used this particular product before. No offend meant. If you have used it or any other kind of colorant in your meals kindly disregard the comment in the video.

Generally you want to be able to poke the meat and have the fork go all the way through without force or sticking... You keep checking it periodically untill it's the desired tenderness... Just add water so it doesnt burn

But its enough for if I have a guest cooking in it. Dont remember how much it cost, but should be less than $20.
The powder is used as both flavor and a thickening agent. It's a little more intense than the fresh garlic which gets more mellow the longer it is cooked .

If I want my gravy to be a certain color or thickness or sweetness I may add a little ketchup to do that. The recipe isn't written in stone and anyone who tells you otherwise is lying. So if you taste test your pot and it seems like it could use some ketchup for whatever reason, add you ketchup cause is you a eat it! Be blessed

That was green seasoning and I have a video in my playlist for that. It's homemade and very good for marinading and flavoring dishes.

Oxtails are good with LIMA beans and other veggies.

The real word is permeate but as most Jamaicans can coin their own phases, I have changed it to take on my own meaning lol So "permetate' is used to signify marinating, or simmering the meat as the context dictate! lol. Pray for me!!
