Ingredients for the chenna rasgulla
Cow’s milk- 1 litre
Lemon- 2
Sugar- 1.5 cup
Refined flour- 1 tbsp
How to make Bengali Chenna Rasgulla
Boil the milk in a bowl and remove it from the gas once it boils to cool down.
Extract the lemon juice and add equal amount of water in it.
Once, the milk cool down add the lemon juice in it and stir it for a while. While stirring you’ll realise that milk is turning into curdle milk. The chenna and whey milk will start separating in the vessel, once they separate properly you can stop the stirring process. Take a strainer after the 2 minutes and strain the chenna out of the whey milk. Strain the chenna on the cotton cloth and add cold water over it to remove the flavour of lemon from the chenna.
Pick the cloth using both the hands and squeeze out the remaining water from it. Chenna is ready to prepare the rasgulla.
Take the chenna in a plate and mash it to make it smooth. During the process of mashing add the refined flour in the chenna and again mash it for 3-4 minutes. Prepare an extremely smooth dough and make the smaller sized round balls of it by dividing it into small portions. Almost 28 round balls are made out of the prepared dough.
For the sugar syrup
Add the sugar and the water in a vessel and cook them until the sugar dissolves in the water. Once, the sugar syrup boils add the chenna round balls in the sugar syrup.
The rasgullas will expand after the 5 minutes. Stir the rasgullas using a ladle but, make sure that it does not touches the rasgullas. Cover and cook them again for 17-18 minutes on the high flame. Check the sugar syrup after every interval of 4-5 minutes.
After the 15 minutes when sugar syrup decreases, add the lukewarm water in it and stir it for a while. Make sure that sugar syrup doesn’t loses its boiling point. Cook the rasgullas after adding 3 tbsp of water for the 3-4 minutes.
After this process check whether the rasgullas are prepared or not. Switch off the flame and leave the rasgullas in the sugar syrup itself to cool down. Dip the rasgullas in the sugar syrup for 5-6 hours. The prepared rasgullas are very spongy and soft. You can serve the rasgullas with the mango shake or the rabree.
Suggestions
To prepare the rasgullas toned milk is the best option. Incase, you don’t have the toned milk then use the full cream milk to make it.
Mashing the chenna and making it smooth is a must process.
Add the balls in the sugar syrup only when it’s boiling.
Add the water in the sugar syrup one by one. Make sure that sugar syrup is boiling.
You can use the whey milk to prepare the vegetable or to knead the dough

hello mam, yesterday again I tried to make rasgulla, at this time I had taken fresh cowmilk from dudhwala. Now to make chenna I used lemon water and hanged the cheena for 1 hr after then when I started kneeding it in 2 mintues it become so sticky and it happens every time I doesn't able to kneed the cheena upto required time and when I started making balls it were so dhilla dhala shape . For cooking I used cooker for that ratio was 1:5 cup but rasgulla didn't turn to double and also taste rubbery from inside. what to do mam? this was my 5th try. pls tell me what mistake I did?what was the reason of not double in size and rubbery taste? and also they were not floating on water when I opened the cooker .

Made Rasgulla's from your recipe. Did everything as described by you though my Rasgulla's hardened a bit after cooling down. If I heat it, they become soft again. I used full cream milk to make these.

*Vaani Mathur* , agar rasgulle hard bane ho to sugar syrup bhi absorb nahi kar payenge. Ab aap inme boora milakar aise hi khakar khatam kar de. Agli bar jab bhi rasgulle banaye to cow milk ka use kare , chena ko achche se masalkar soft kar le aur chena men corn flour/ ararot jyada na milaye.

Hi all. If your rasgulla dint turn out well, here are the points you should take care of :
(1) After making chena, mix it in a mixture grinder for 2-3 mins or untill they become soft and then further mix it with your hand. Hand kneading is very important. this way rasgulla will be soft for sure :)
(2) Don't add any starch to it, make it with chena only.
(3) Sugar syrup should be very diluted. concentrated syrup can make your rasgulla lose its sponge and also leave it uncooked inside.
(4) While making balls, press it and make tight balls and while cooking it will become double in its size.
(5) To save your time, energy and gas you can cook it in a pressure cooker :). If you have a wide cooker then its very good, even if you don't have you can use regular one but make sure that you don't overcrowd your rasgulla.
(6) Boil your syrup in cooker, add chena balls in boiling syrup at high flame. Let it cook exactly for 5 mins(high flame). switch of the stove and wait till all the pressure is released (30 mins) let it cool down a little and then open it. Its ready..:)

Aaraaroot powder is not required if chhena is done perfectly

But this flour or even maida which some ppl add make them rubbery afterwards

Nisha Ji Many thanks and compliments to you. I followed all steps & squeezed alot of juice out of chenna in cloth unfortunately the chenna did not show grease or crumbly texture despite me kneading it up to 40 mins even though you advised 10 mins. it was pasty gloopy like pakora mixture so i couldnt form balls & had to drop the spoon mixture into syrup so there was no round shape to balls just odd shaped. The milk was whole fat cows milk & balls grew in size formed great spongy rassogullah & rassomallai. NOT sure what happened? i followed another recipe one time where chef told hang chenna in cloth for 3 hrs, knead for 10 mins but again it was gloopy so i kneaded for 90 mins to get the greasy dough into balls. very frustrating. please advise :)

*V R Secular Indian* , make sure rasgullas are completely submerged in sugar syrup and keep them at room temperature for 10 to 12 hours.

Your chenna must have become hard tats why. The moment your milk curdles stop adding vinegar water. If you add more then rasgullas becomes hard

I have tried this recipe 3 times. Everytime, the rasgullas first become fluffy and round. After I turn off the flame they become more flat and less fluffy. Why is this happening?
*kopal agarwal* , make chena from cow milk, mash it properly till smooth. Don't use too much corn flour or ararot and drop rasgullas in boiling sugar syrup.

Yes. Its happenes bcoz rasgullas are very soft .it can't hold the shape like gulabjamun. If it is shrinking more than normal that's mean something is not properly working out for you

You can add little bit more all purpose flour or corn flour to hold the shape.

Because too less water was added compared to quantity of sugar, all other chefs suggest double quantity of water with sugar, but mam suggested half quantity, 4 cups sugar and 2 cups water, which is the mistake here, although she added it later on but maybe in urs it would have been less
