    Ingredients for Chhena
    Full Cream Milk - 1 ltr.
    Vinegar or Lemon juice - 2 table spoon.
    How to make Paneer ( Cottage cheese) at home.
    Always use full cream milk to make paneer at home. Boil milk in a deep pan and keep on stirring so that it do not stick at the bottom of the pan.
    Once the milk starts to boil add lemon juice or vinegar into it. Within few minutes you will see that the milk will separate from the water. Turn off the flame as soon this happens and add cold water or ice cubes into it. The paneer will instantly separate from the water and will start to float at the surface of the pan.
    Now sieve the chenna with a muslin cloth. Squeeze the cloth with hands to strain any excess water from the paneer and take it out from the cloth. Chenna to make rasgulla is ready.
    If you want to use this paneer to make any curry recipe, then do not takeout the paneer from the cloth. Instead place a heavy object at the end of the cloth for half an hour. Within half an hour, the paneer will become hard. This can be used to make Indian curry recipe like matar paneer, palak paneer, paneer butter masala etc.

    We have just finished lunch. I cooked butter Paneer today. using all methods. Right from preparing Paneer Rasgulla Biryani and Naan. I am tired today, but the huge satisfaction that I see on my family member, my niece still searching for Rasgulla in fridge. You are great discovery and teacher for us.     Thanks a lot for sharing your recipe! I would like to correct that there is no fermentation in the process, but simple chemical precipitation of the milk protein (only in brackets). Have you ever tried to mix the remaining liquid with fruits or fruit juice like mango or berries? It's a very popular drink in Switzerland (where I come from) and you don't waste the precious nutrients in the whey (proteins, calcium, potassium...)

      We Indians soak lentils, legumes, vegetables etc. before cooking to absorb the nutrients of the whey water, we don't waste it either.

    Mam your recipes are very nice and very neat explanation to. I tried this recipe with packed milk (Nandini milk) which has 4.5% fat. I got 100gm of paneer approximately how I got less please reply

      Keep the weight for longer time. May be at least 4-5 hours minimum.

      you have to freeze panner for about half a day to make it don't loose it texture .

    With 1 L Buffalo milk I got very little paneer out of it, I followed this video, what went wrong? Milk is good and always produce thick cream. Also, your leftover was yellowish and thin, mine was still white and milk like.

      *Shashi* there would have mixed some adaptive in your milk which is increase the shelf life of the milk.
