I get 1 minute and 40 seconds into the video before I start running into issues. My vertical loop cuts on the boat come out weird and jagged, and I have no clue how you straightened yours out the way you did. This isn't a great tutorial
I encountered this as well. What he does is, just after placing the location of the loop cut, before finishing it, clicking S for scaling, X for locking it to X-axis and then 0 to make it have zero dimension in the X-axis. Took a few tries to see at which point you need to press X. Hopefully this helps anyone coming up with the same question.
Try blender guru's doughnut. With that and slowing this down I think it will make sense. He's talking through all the steps so beginner in not expecting you to do any steps just yourself but you'd want to be familiar with the interface and the primary steps in edit and object modes.
