@enorrismusic personally, I was in this situation. I wanted to avoid the tax for transferring so I ended up placing my property into a land trust directly, then having an anonymous LLC be the trustee. Triggered nothing with mortgage company and kept my name out of public record.

Mine are setup similarly, Never confess your ownership to the tenants, just say you are the "Property Manager" and some "Company" owns it. The tenant should only see a generic street name LLC name on their documents, you aren't lying.

Talk to your mortgage company. I asked Rocket mortgage about transferring the property into the name of my trust and they sent me an information pack explaining what was needed. Not every mortgage company will treat a transfer as a sale and demand loan is paid back on transfer.

So if your Wyoming LLC gets sued, who shows up to court on its behalf? There is no such thing as complete anonymity. The owner can still be discovered in a lawsuit.
Are you suggesting that the State LLCs pay the Wyoming LLC And then the Wyoming LLC pays the management company? Why not have the individual LLCs pay the management company directly for simplicity? Wouldn't that yield the same results with less transactions? I have this structure but my Wyoming LLC doesn't pay anything... Am I doing something wrong?
When I setup my WY LLC to hold my money, the banker asked how much money to determined if it needed to be foreign filed in my resident state. Luckily I didn't meat that threshold and she was the business rep.

Banks usually won’t deal with you and your LLC together
