- I spent a few days with my friend Timothy Pakron aka @MississippiVegan at his beautiful home in Jackson Mississippi. Timmy is also a vegan chef and food blogger so we had SO much fun cooking in his kitchen.
This is Part 2 of this vlog and it starts by us trying the oh so popular unicorn noodles or pink noodles. I hate everything unicorn in the food world, so we just made pink noodle dishes and decided to make it a food styling challenge ala hot for food! You decide who wins!
We also made vegan burgers with fieldroast patties, which are epicly delicious. We hit up the Mississippi Farmer's Market and meet Timmy's hot farmer friend! Timmy makes me vegan gumbo, rice pilaf, his secret bacon (you'll have to wait for his cookbook!), and vegan biscuits from Annie's which we can't get in Canada... I don't think?!
The next morning we make a huge brunch feast and take a photo of it. It included Timmy's tater tot casserole, tofu scramble, more secret bacon, and more biscuits with vegan butter.
We head to Gulfport and I try boiled peanuts for the first time in my life. They were from a gas station, btw! Then in town we check out Lil' Ray's famous po boys. But because we're vegan we have to eat french fry po boys. This is not a vegan restaurant! We also get some snacks at Health Nuts, the local health food store.
On the way from Gulfport back to Jackson we hit up Qdoba's - a fast food chain. They have really good vegan options! Including a tortilla soup and customizable burritos, tacos, burrito bowls, or taco salad.
My final meal in Jackson was again at High Noon Cafe. This place is super cute. They have really simple homemade food with just a few options available each day of the week. I highly recommend it!

I knew Timothy lived in Jackson, but aah! I can't believe y'all were in my hometown (Gulfport)! I stop in at Health Nuts & Good Karma all the time lol. Glad to see y'all had such a great time: you both should definitely do more collaborations together in the future. I'm excited to see the cookbooks y'all are creating. Ever little tease just makes me want them even more! Also, I don't know if Timothy knew, but there is another Indian food restaurant in Gulfport called Orchid Indian Cuisine. They have a bunch of really tasty vegan options. Not all options are marked on their current menu, but the staff there will point out the rest.

I work in a small Mom and Pop. We don't like wasting food so we do sometimes run out of things (AKA decide not to make any more of something) before the end of the day. It keeps our operation costs down, too.
We are also closed on Mondays. Without it, the two owners would not have a day off, and that's with both of them working some 70+ hours Tuesday-Sunday.
Anyways, love yall! And I agree with others, hotformississippivegan should definitely become a series!

Lauren! You need to try a Guedille! I went to a little cantene, and they had that! It is vegan and I really enjoyed theirs! It's a hot dog bun, with fries and topped with coleslaw! They had an oil vinegar coleslaw and I absolutely loved it.

Your dining experience at Lil Ray's = damn near every dining experience I've had in Arkansas since going vegan. :-( We are soooo behind the times here in the south. You're lucky to have found steamed veggies there... here they'd have been cooked to death in ham juice or something! LOL

Asafoetida/hing isn't a garlic replacement so much as it's own thing in Indian cooking. They put it in rajma and other things with beans/lentils and the Indian mom I learned from swore it was good for digestion.
Daiya is the best vegan yogurt I've tried. It totally reminds me of when I used to eat yogurt every day before high school.
You guys are great, you need your own food network vegan diners drive ins and dives. And Timmy confuses me, he is gay, drives a truck, wears camo, and boots and is vegan. lol. LOVE IT!

Loving the real life vegan experience at Lil Rays. Most places are not vegan so you become so good at the DIY sandwich :)
I use asafoetida all the time!!! But also use garlic and onion in the same recipes haha. I add to most sauces I make and a lot of cheese sauces
