- I spent a few days with my friend Timothy Pakron aka @MississippiVegan at his beautiful home in Jackson Mississippi. Timmy is also a vegan chef and food blogger so we had SO much fun cooking in his kitchen. In Part 1 of this vlog I make us a RECIPE?! for dinner upon arrival from our 2 day trip to New Orleans. I made a roasted vegetable salad with spicy chickpeas, and a hummus based dressing with chives from his garden. As well as a roasted garlic bowtie pasta dish with green olives and cashew parm.
We also go for lunch at High Noon Cafe before going foraging and checking out the Cypress Swamps. We also go on a Whole Foods run to get food for the week, I'll share the snacks we picked up, and we have a slice of vegan pizza from their hot bar as a snack.

The papery ball is an oak apple gall. It is a deformity of the oak leaf caused by a wasp. The wasp larvae are gone by the time the gall is found on the forest floor (hence the holes that already existed). It's actually a very interesting relationship between the wasp and the oak.

Hell yea girl that's like one of the main pluses in living in the south is you can afford way more for your money 😜 Depending where you're located there's not much to do outside so you deck out your place. Introverts dream.

Lauren I need this cook book now. So excited for it. I cannot wait to try them all. I hopefully will fully integrate that Vegan lifestyle into my life.

The only place I've really ever wanted to go in America is to Mississippi and Louisiana to see the bayou and swamps. Your vid part in the swamp looked amazing!
I happen to LOVE the Kite Hill yogurts. They now have plain/original unsweetened in large tubs, which is a great base for savory dishes or if you want to add your own sweet using fruits, etc.

next time you go to jackson you should go to cool als it's a little hole in the wall right by whole foods and they have amazing vegan burgers and other vegan stuff
oh and those ball things aren't filled with bugs lol they come from oak trees i think i'm not really sure what they are but they pop when you step on them
