Human bone marrow might be the best part of a human. We don't have a lot of marbeling in our muscles, and most of our muscles are used for moving us around all the time, which would make them tough like eye-round.

Bone marrow is one of the greatest underrated cooking ingredients (it gets a bad wrap because most people associate bones as something dogs chew on) but seriously marrow is the OG carnivore secret sauce 👌

Can you try making dry aged bone marrow? I had dry aged bone marrow at a restaurant before and it was lovely. Quite strong on its own but it went really nicely with the dry aged steak.
That burger sauce is goals. Gonna make that soon. Also wondering how adding some cream cheese to it would change or elevate the texture and flavor. Gonna try both
Love the consistency of those patties. They look amazing and bone marrow is not something I have had yet so I will have to try it. Keep up the great content Guga!
I've been really curious to see if bone marrow can save the worst cut of beef. Take bottom round (which includes the eye of round), grind it up, and add in bone marrow at a 70/30 ratio. I feel like you could get a pretty damn good burger out of that.
Guga, Absolutely love your videos. Here is a video idea for you if you need one: wet brining meats. Traditionally people do this for turkeys at Thanksgiving but I have tried it on pork chops, sirloin steak, New York’s, Ribeye, and chicken breasts. From my experience it absolutely transforms pork chops (much more tender and juicy), significantly improves sirloin steaks (much more tender), mildly improves ribeye and New York’s, and gives chicken breasts a weird texture that I don’t like. I would love to see a comparison of wet brine versus your classic dry brine Guga steak, possibly even a wet brine eye round versus pineapple for the best tenderizer. My typical wet brine ratio is 1/8 cup salt for 4 cups of water, completely submerge the meat, let sit in the fridge for three days, remove from the brine, lightly pat the meat dry, season with black pepper and garlic powder, then grill per usual. Obrigado my friend. Keep up the videos!
Bone marrow is awesome. Used to be able to buy steaks at the market that included a section of bone that had the marrow. My sister and I used to fight over who got the bone. Nowadays, it's hard to find locally like that. But when I buy a ham steak, I always look for one with as large a bone section as possible.
Try bone marrow steaks. Shape the bone marrow by itself into a small patty and fry on high heat enough to get it crisp on the outside and then eat with salt and pepper. The slight crisp from the high heat and the taste pair perfectly. The left over juice is poured back on or made into a roux and soaked up with toasted bread of your choosing.

I love this episode 😂 watching Leo try Bone marrow for the first time is fantastic! Guga and angel know what’s coming and Leo is just along for the flavor train! 😂🤤
I went to the local farmers market, and I bought beef bones specifically to make bone butter. When I described what I was looking for from the the Amish butcher, they had a bag of bones already with a price on it. I brought them home prepared them the way you suggested and even though these weren't cut long ways, they still took on all the flavors. I got to try one piece of bread with a little bit of the bone butter, realized I couldn't eat the whole thing in one sitting and put it in my refrigerator. Once my daughter discovered it I didn't get any more. So I have to wait until the weather cools off a little before I fire up my oven again. But this burger definitely looks like something to attempt.
There is actually good evidence to suggest that human hands evolved to hold stones meant for breaking open bones. Bone marrow will actually stay edible long after the meat has gone south. Bone marrow is amazing yo.
you are clearly wrong, my favourite vegan soyentists say that early humans used to open coconuts with those stones and they also picked fruit from the trees and peeled it with their fingers
So hat down for the bone marrow adding to the meat. I just made burgers for the family and it was a hit! I must say I added a beef demi- glace on the top of the burgers...everyone went crazy!!! Thank you so much for wonderful recipe, you rock Guga! I hope one day you will come and visit Serbia! 🙏❤️👍
I mean, I get Leo's hesitation and calling bone marrow gross. But I use to think a slab of meat called a steak was gross. But now I know how good steak is so now I can look at a raw steak and salivate because I know how good it can be. I think bone marrow is the same way!
Hi Guga, we learned that putting some beef tallow on top of a brisket before wrapping it for the final cooking brings the best results. How about using bone marrow instead of beef tallow? 🤔 would this take it even to a higher level? Please give it a try. Thanks ❤ Courtesy of Warp 9
Unfortunately it wouldn't, because bone marrow is primarily collagen, not fats, so would not break down and infuse the meat like you want tallow to do. If he didn't use the wagyu, the burgers would probably have turned out to be dry, frankly.

Yeah, the first time you eat prepared bone marrow - when you're basically a city kid and never had anything even remotely like it: it does seem a bit quest for fire. That'll take ya a minute to get used to, because you're got the actual bone split open. Especially kids who grew up on, mostly, fast food or boxed items and such. Then you've got this split open bone with this almost jelly like substance and you're scooping it out of the center of the bone. That'll take a second to orientate, but the flavor is well worth the initial discomfort.

I got a recommendation for an experiment! You should try the seasoning of some type of sausage and do it on a beef burger instead. Chorizo sounds great. However chorizo is made with all the spices and seasonings, do that to the ground beef and make a burger with it!
I’m hoping you try this and it turns out great.
I lelz so hard at the focus on Leo at the end scraping the marrow onto the burger bun 🤣🤣🤣
Angel proving why Guga keeps him around his channel 😂
Damn dude.... you are good !!👍I love to cook, and I am a fair chef, but you have achieved a whole nother level. That's why we watch. Guga is an artist 👌
Guga you are a master chef! Which is why I confused by the shallots, fried onions and raw onions, you could try making slaw from apples or peaches and putting that on top!
Damn - you have no idea how your videos brought my bbq/kitchen game to a whole other level...thanks for the content guga!
Another great video guga. I have come to expect nothing else. Enjoy your'e journey. 👍🏻😋👏🏻
Leo became an instant convert of eating 🦴 marrow! He was instantly addicted to it. He went bananas when he scooped up the remaining marrow and added it to his 🍔! That part was funny 👍! Now that's a recipe I'm going to start using! Max the 🍖 guy and Guga are off the mental when it comes to experimenting flavors that goes with meat and seafood! SALUTE TO THEM BOTH!
Do a whole foods dry-aged steak vs your own dry-aged steak. Another great video, Guga!
Hi Guga, I love watching your videos about the perfection that every cow or pig strives for. It all looks really really good. Have you ever tried "Txogitxu Txuleton"? Greetings from Germany.
Watching guga smile just makes my day
Amazing Guga, for me this one is one of the best dishes that i ever saw you trying(watched most of your videos) and obvilusly i want it to try also 😆
We eat bone marrow with straw, cut bone in top than cook it, when it done put straw in the bone and "slurppp" you got the nice bone marrow sup...taste soooo gooood
I’ve tried almost every single recipe you’ve posted (accept highly experimental stuff) and I give your channel mixed with creativity a score of 9/10 same the cooking guy didn’t even get 9/10
I think I'll run to the supermarket now. Those crispy onions are BEGGING to be added to the bar's menu.
Guga, did you try to make an experiment dry aging a whole stake with different spices?
Like in paprika, in pepper, in garlick powder, onion, powder..?
I like how the nephew seen he was starting to get popular on TH-cam and just has been riding gugas wave since
When angel said that came from a human was so funny
I LOVE your content!
You (guys) are awesome!
Please never stop
That sauce you made looks heavenly!
Literally just made burgers and scraped some bone marrow on top. Let’s see what God Guga did!
This was a good one here, especially the look on Leo's face 😂😂😂😂👍👍👍👍👍
Leo going back to the marrow at the end is GOLD hahaha
