I had a Shake Shack birria collab burger recently and it’s as good as it sounds. They put a deep fried, crunchy corn tortilla on top of the meat to add texture and reduce sogginess. No cheese, but added a salsa verde for acidity and heat. Astonishing combo. I’m sure Guga’s is amazing too. The meats and flavors are a perfect match.
Fun fact, first Sous Vide Everything video to my knowledge that the Sous Vide meat wasn't featured in the "doesn't look good but watch this!" segment but a completely different meat to be grilled or cast iron fried.
Never had homemade birria before only in a restaurant, but I'm about to run to the store and grab all of the ingredients. Thanks for my 4th of July burger recipe!
It does. I've done it. Works amazingly well with King's Hawaiian savory rolls or slider buns in particular. Toast your bread (or if you're the type that goes for sick levels of overkill, garlic-bread your bread) and melt on some pepper jack cheese, add a fat dollop of birria, dunk it in consomme, eat until you're too fat to move, take a nap afterward.

After watching your videos, I have three requests for future videos: - Please try some other cattle breeds than wagyu and American beef. - How do you clean all your pans and other cooking ustensils so they continue to be so shiny ? - Please cook a foie gras in a terrine using sous vide. With how flavorful and savory birria is, I wonder if it would be any better with MSG and I+G (a lesser known food additive but something almost everyone eats every day, because it's a potentiator that makes MSG ~4x more potent it's almost always added to processed snack foods in addition to the normal MSG) added.

I recommend you to try, caramilize your meat with maple syrop, use maple charcoal, compound maple syrop butter, and for a experiment, bacon fat dry age experiment.
If you're going to cook the short ribs til they shred apart on their own was there a point in using such a high marbling score short rib? Could take a choice short rib, add a couple spoons of wagyu beef tallow and call it a day?

In the same way Guga made the Birria butter, you can make bone broth butter. De-fat your broth before storage, and that fat is and awesome basting butter. It's even better if you use bone marrow in making the broth.
Hey Guga, if that is a copper lined pot at 04:00 be careful as cooking with vinegar or other acids in copper pots can leach dangerous compounds into the food.

I have a food experiment suggestion. I have no idea by what process brisket is made into corned beef, but do it at home to prove you’re good at it, then try corning other cuts of beef, and even other varieties of meat. Corned filet mignon, corned chicken and corned pulled pork. I might be crazy, but it might be good. Who knows?

Hi Guga, you might not notice this comment but I wish we could see you cook Kare-Kare on this SVE channel. It's basically a beef peanut stew and it' really good with rice. You don't have to use tripe, you can just use oxtail vs an elevated one that uses a fancier cut of beef. Really wish I could see a vid like that someday.

The Birria torta I get at the food cart comes with pickled red onions. It makes it so much better in my opinion
the acid and the onions crunch really comes through in a fatty mushy sandwich like that
