The liver sauce is popular in Luzon, but not in Cebu. The traditional condiments in Cebu are suka pinakurat (native spiced coconut vinegar), calamansi, soy sauce, and fish sauce. That resto 'Lantaw' has several branches in Cebu, and literally means 'Overlooking' since they offer great views. The one that you are in is in Cordova, there's one at Il Corso (SRP), and there's one in Busay.

The sweet sauce you were looking for is a liver sauce. But that's mainly a Luzon thing. In Cebu, our sauces consist primarily of coconut vinegar, soy sauce, and calamansi. A dash of minced onions and cut-up chilis are a welcome addition.
That resto used to be called LANTAW... the pork sweet sauce is LIVER SAUCE... this is not a normal sauce in Cebu. Only in Luzon island. . Ask for MANG TOMAS if they have. alternatively, you can have SPICED VINEGAR SAUCE if they don't have it.
The usual brown sauce for Lechon is a Liver Sauce. Cebu basically made and prefer their own Vinegar-based sauce to counter off the taste of their own version of Lechon.

In the video you were looking for that sweet brownish liver sauce which is popularly known by it's brand name "Mang Tomas". Liver sauce with lechon is popular among Tagalog speaking regions (NCR & central Luzon). In Cebu we eat INASAL (lechon) with spicy vinegar with a dash of soy sauce & calamansi. So don't be surprised if not all Cebu restaurants serves Mang Tomas liver sauce. Also, sinigang is not as popular as tinola among fish soups. So it's not just language that makes the various regions diverse. Our palates are also distinctive from each other.😂😂😂
Completely agree. It’s always inasal just like Bacolod. They insisted using the term inasal and we should do it too. As for sinigang I realize that they enhanced vinegar since it’s ice fish once arrive in Manila from the provinces or bangus who’s does give real taste. Our sea foods fresh from the market, not frozen still that sea taste, so we don’t vinegar except tomatoes and spring onion. That real fresh sea food taste is what we missed. Cebu never use mang Tomas. It’s like criminal destroying the original taste. Tagalog Lechon has no taste and they relied on the sauce.

True in Visayas region we dont use Mang Tomas but just the regular soy sauce-vinegar-calamansi tandem. It tastes even better than Mang Tomas for me, especially if we use sukang bisaya or the native/coconut vinegar, its perfect for both the lechon and lechon kawali.

Hi Mergim … The steamed fish is called “Lapu-Lapu” or Grouper fish. The other is a simple soupy dish called “Tinola,” which is different from Sinigang, as it isn’t sour. If made with fish, it is called “Tinolang Isda” or fish stew and “Tinolang Manok,” if made with chicken or chicken stew. Isda is fish in English; Manok is chicken. 😊
Mactan isn't really that developed compared to Cebu and Mandaue City. It's like a beach town, but it's a city. A resort city to be exact, although it has more high rise compared to Mandaue but you can only find small pockets of development. You literally passed our subdivision visible after the toll gate in CCLEX. One thing you can try doing is going back thru CCLEX, the opposite way, from Mactan to Cebu during sunset. I guarantee that you will witness the best view on a bridge in all of the Philippines, a mixture of city skyline, mountains and the sea. It will be a really epic sight! I know because I see this everyday in our subdivision, but if you go thru CCLEX, the view will be 10x better.

Sinigang is a sour soup while tinola is plain savory soup, they are both optional on flavor it's either meat or fish but the best flavor for tinola is the free range chicken and the best flavor for sinigang is prawn or snapper.
Tinola has ginger so it is actually good if you have colds. Chicken soups are usually cooked tinola style while pork with soup are usually cooked sinigang style.

It's my mother side province. I stayed there in Lapu- Lapu formerly known as Opon for like 2months...spending time with my cousins. I miss the place.

Mergim, liver sauce with lechon is a Luzon thing. Visayas & Mindanao, they'd go for Suka (vinegar) Toyo (soy sauce) and Sili (chili pepper), as Lechon in Luzon are mostly bland in taste, hence the inevitable use of Liver sauce, like Mang Tomas..
Mergim is now loving rice more in the Philippines ...

Sinigang is a sour soup while tinola is plain savory soup, they are both optional on flavor it's either meat or fish but the best flavor for tinola is the free range chicken and the best flavor for sinigang is prawn or snapper.

Tinola has ginger so it is actually good if you have colds. Chicken soups are usually cooked tinola style while pork with soup are usually cooked sinigang style.
