"The Bible" is actually a shortened way of saying "The Holy Bible" But the word bible actually derives from the word "book" or book of reference. A bible is really a collection of crucial knowledge about a particular subject. It's like saying "The pill" which pertains to birth control and pills in general which have a multitude of uses.
He probably itemizes to get the tax the lowest (remember, tax rates were pretty high back in the 70s) and it takes awhile to go through your receipts to sort them out.

How can it take Jerry a whole week to work out his income tax returns? He's employed, not self-employed.
