I just found a new way to prepare that dish. first sprinkle some salt onto the melon and let it sit and sweat for a few minutes, squeeze out some of the moisture, that way you can stir fry quickly without it sitting and stewing in its own juice. Love it!
When I was young from toddler till 19 I hated bitter melon but as I grew into an adult. My palates evolved, and now I enjoy stir fry bitter melon with scallop n oyster sauce 😋
I can't remember where i had bitter melon with minced chicken in Saigon, I had it one time and loved it, its totally a different taste to minced pork with woodear mushrooms and stir fried with egg and beef.. i hope to find it again when i come back to saigon in a few months' time and hope to see you too, chef

They have been famours for decades, first location was in Trần Quang Khải Street but now they move next to Cầu Kiệu (Kiệu Bridge) in Phú Nhuận District (Original location is now Gogi BBQ restaurant). Their current place is a bit small, but their dishes are just special. Exact address is: 10 Phan Đình Phùng Street, Ward 2, Phú Nhuận District. Hope you try it soon.
growing up my mom always tells me bitter melon has good medicinal value. i didn't like the taste but when i'm older i do enjoy it more soup or stir fry. but the medicinal value thing my mom says that about so many food that it's hard to believe sometimes :))
Actually it's true. My mum is a biabetic, I've got her to drink 3 tablets of 1000mg of bitter melon extract before every meal. She has taken blood tests and confirms there no spike in her insulin level.
Yo that place is one of my favorite spot that I almost eat everyday, in every week :)) My favorite dish is "Bò xào sa tế" which is stir fried beef with onion, chillies, cucumber and sate. I recommend you to try that cause it's really really good tho
I prefer ground pork over beef, since it got better flavor. But since you’re into bitter dish, you need to try Laos or Thai bile soup, especially Hmong deer poop soup which I don’t think you’ll ever find in a restaurant, Hmong butter organ soup is good too.

Have you tried “ mướp đắng trộn dăm bông” bitter melon slices soak in ice water for 1 hour, Mix those cold bitter melon with pork jerky ( ruốc bông / dăm bông). And enjoy.

You don't need to use Xin in front of Chao everytime. There are situation where you do need to use it.I would drop the word Xin, its pretty formal. You don't need to use it in casual conversation.It's not wrong to use it ,it just sounds off.Chao is fine!

it does have good medicinal effect. Everything is medicinal if you eat it the right amount
