We steam fresh brocoli (usually in the microwave) then add in a pat of butter, a can of drained corn and seasoning to taste (garlic salt, Mrs. Dash, whatever). It's so good... who knew brocoli and corn would be so good together!
My husband loves a good burrito. I can see using the rice and the beans for some combo burritos to make him happy. We make similar versions of the carrots and the asparagus, but I will definitely try the corn and broccoli recipe. Thank you for sharing with us!
I am anxious to try some of the side dishes after watching this! Another quick asparagus prep that I learned from a high end restaurant is to simmer the spears in chicken bouillon and a bit of butter until until just tender. So simple but good.

I can make a whole meal of sides. For years it was just my Mom and I and it was so fast to just make 3 or 4 side dishes for dinner. My favorite was fresh green beans, new potatoes with some thick bacon cooked in the crock pot, potato salad and brown sugar carrots with corn bread. Loved seeing your side ideas. ❤
Need to try that version of refried beans, I usually just stir in salsa & top with cheese. This is the way I almost always make asparagus unless I'm bacon wrapping & roasting. Keep your awesome selves coming! 🎉
I've always boiled my asparagus. But I've never finished it off with parmesan cheese and garlic. We've never had Mexican corn. I'm definitely going to make this and the Salsa Rice. I fry carrots in salted butter then add pineapple apricot marmalade. Once the marmalade is melted, low heat to candy the carrots. My ex sister-in-law tasted them and she doesn't like carrots. Now she makes them but adds cinnamon too.
Our grandson lives cooked carrots when I make a roast. I’m going to try these carrots and see if he likes them as much. I always make a LOT and that 8 years old will devour them.
The broccoli and Mexican corn dish and the rice dish both look really good. I always have Minute Rice here so that will probably be the one I try first.

Thrive market must haves for us are: cashews, balsamic vinegar reduction, dried apple rings, and then some things that change from month to month. Thanks for introducing them to me! I have always made my rice and quinoa with salsa as part of the liquid. Never thought of adding the cheese though!

A friend makes a bean dip with re-fried beans, salsa and cheese melted in it. So good.
For those of us who have to watch our sugar, I use the brown sugar Splenda blend for my carrots. Still wonderful!!!

Little suggestion..... instead of canned refried beans.... buy whole Pinto beans & mash them yourself, or emersion blend them, sooo much better.
Better yet, cook homemade pinto beans , n refry them add seasonings .way better than can refried beans.

Since salsa is already in the rice, I would enjoy some added freshness with it: sour cream, cheese, lettuce, tomato, onion, cilantro. Sounds heavenly.

I bake my asparagus with olive oil, minced garlic, mozzarella and parm cheese. 😋 😊
