We found the same thing about food courts in Thailand. Really high quality, loads of choice and almost like a night market. Something you don’t really see in Japan or Taiwan. I really did scoff when my friend recommended we eat at the malls.
Balut is also sold in Taiwan, in Taipei near the St. Christopher's church, where there are Filipino stores. By the way, where in the Philippines is this video taken?
6:04 - these various "small eats" that have deep cultural roots are rare in Taiwan. You guys should definitely start something up, perhaps even just something small at the night market and see how it fares. It could be worth a shot. :-)

Perhaps Filipinos could consider making cakes with Balut flavor, Balut milk tea, and Balut coffee; I believe they would definitely enjoy it!!!
