When I lived in the northeastern province many years ago, I used to eat straw-baked chicken. In Bangkok, it's difficult to find a place that sells straw-baked chicken. It cannot be prepared in an enclosed area, such as a restaurant kitchen, and requires more open space. There is a greater chance of a large fire starting if the cook is not paying attention.
This is exotic way of cooking 😂 love it. The one-of-a kind food reminds me when I was young, my family and I had the dinner right at the paddy field after harvesting rice. It was an unforgettable moment.
"Kai Op Fang" "Kai" = Chicken "Op" = Baked in a closed space "Fang" = straw "Kai Op Fang" = Bake/Grill/Roast the chicken in a closed environment using rice straw as fuel.

It has amazing crackling, which one dunked in a really spicy sauce. i think the meat was really succulent, too. If you know where that could be had again, I would love it if you would share. It may not be a dish native to Thailand, but I definitely had it in Bangkok.
This chicken is a whole universe away from rotisserie chicken from Costco. (Lol). Uncle Peen's area is so much like where I stayed in Samut Prakarn back in the day, about a half hour from Central Bangkok by the local bus. Sabai dii, Gary.

Also things like quail & quail eggs & the myriad variety of things not prevelent in the west. It does, indeed, look excellent though! Good videos, buddy.👍🇨🇷
More than 50 years ago there was a restaurant on Petchburi Rd. near Ekamai selling this "kai opp farng" (straw baked chicken), and years before that my father used to bring home this chicken when he came from up country but the chicken was not very tender like present.

I remember a whole pig and cow body being slowly BBQ'd next to an open fire in Argentina, eating freshly slaughtered lamb and rabbit paella in Spain or just going to a USA backyard Smoke- and BBQ-Fest - showed me how good people everywhere are. Food is art and art is the non-verbal language everyone comprehends: it unites us all.
Great VDO , can you imagine if the chicken was a “Kai Bahn” it would have even more delicious! Hard to get and more expensive than the “Cornish Broiler” for sure
I would recommend u take Kai Tai Nam (ไก่ใต้น้ำ Chicken underneath water), Kai Hlam, Kai Kraboak Mai Pie (ไก่หลาม, ไก่กระบอกไม้ไผ่ Chicken in bamboo) also 😂
