Flavor comparison Gateway direct vs Hunker indirect? I have seen statements that the 30 gallon size is the perfect size for a drum smoker, better than the 55. Not sure why. Could I get your opinion on whether there is a performance benefit with the 30 gallon size vs 55 gallon?
I don’t find any difference in flavors when cooking on gateway vs Hunsaker. The 30-gallon is good if you’re doing smaller briskets or 1-2 pork butts or flat ribs. If you want to hang ribs or do large full packet briskets or 4 butts, the 55 gallon is better. I think a turkey would be better on the 55 too so it’s not so close to the coals.

I have a pit boss upright 5 shelf smoker , my son did something about two weeks ago I ( at 69 ) years old never thought of at work they had some kind of pot luck BBQ. he did deviled eggs . He put about 50 eggs into my smoker and cooked them in there hard boiled so to speak . I thought they would explode but they fully cooked nothing broke. Then he smoked them after he shelled them to make a long story even longer ,, ( I mean shorter ) LOL they were awesome when done .I must have eaten 8 or 9 of them he had to make more.. woopsie !!! THANK YOU FRANK FROM MONTANA. PS keep up the good work. Did you ever hear of smoked hard boiled eggs before ???
Much appreciated comparison as I'm in the market for a drum smoker. However, the one that has my attention is the Cotton Gin Harvester. It has a barrel access door. That feature seems like it would be of great value. Are you aware of Cotton Gin smokers and if so, what is your opinion on the value of the access door?
When in memphis are you going to Graceland ? I have been there twice once in 1974 ( he was home then ) and once in 1997. Went through the house. On tour i am an Elvis freak i seen him in concert seven times . Thank you thank you very much..........
It would be great to add images to your video podcasts. You add some brand name graphics, but please add some images of what you are talking about... this is a video platform!

Great info. I'm not a comp cooker, but serious about good Q. I just ordered a Hunsaker 55 and I'm looking forward to rolling smoke on it.
I run a Cotton Gin and love it. The wait time to get one is crazy but they are great smokers.
Thoughts on gravity? Debating what backyard pit I should get to get close to offset like flavor with as little work as possible
I have hunsaker parts for all three WSM's I own, next is a Hunsaker drum.

Sounds great! I have smoked eggs before. It can be a little tricky, so they don't get too rubbery. That's awesome that yours worked out so well.

You will not regret the Cotton Gin as long as you can wait 10 months to get one.

Hunsaker is by far the best drum smoker.
