    Thanks again for another beautiful HOW TO and beautiful and inspiring works of art!! Since I’m still learning, is there a less expensive way to get started and get a creamy chocolate similar to your 50/50? Callebaut and Merkins are larger units and a bit pricey while learning. There is too much snap with melts I’ve tried. Thank you!!

    Beautiful work ❤️ I made chocolate covered strawberries a few days ago but I have a big problem with white chocolate bc it's not smooth as yours and it dries so fast. I would like to try again for Valentine's Day.

      Hey there Tani, have you tried using paramount crystals with your chocolate? This will help with achieving good fluidity. Its a cheap but good alternative to cocoa butter which does the same thing, although cocoa butter tastes heaps nicer 😋

    Absolutely gorgeous! Upon your recommendation, my daughter purchased this chocolate and dipped strawberries. She melted it on the stove using the double boiler method. However, it did not set. I am sure we missed something. On average, how long does it take this chocolate to set? Also, did you use 100% Callebaut or 50/50?

      Hi Kenyatta, we're they callebaut callets? The same I use in my videos? The reason I ask this is because the callets are pre-crystallized.
      It should only take a few minutes to set firm so it sounds like whichever you have is not tempered correctly.
      This is also another reason why I recommend the 50/50 method for dipping strawberries because it illiminates all the tempering hassles and keeps things simple.

      @@PipeIt Thank you! Yes, I purchased the exact Callebaut callets numbers 823, 811, and W2 but tried the double boiler method. Next time we will try putting it in the microwave. I guess I wanted to know did you use the 50/50/ method on this video or 100% Callebaut? Thank you for replying.

      @@kenyattacooks1293 I use both methods in my videos but most commonly prefer my 50/50 method. Using the microwave does make tempering with callets easy but otherwise if using a chocolate melted or double boiler try this...
      When your melted chocolate is at a temperature of about 40°C, the rule of thumb is to add 5% Callets at ambient temperature (i.e. between 15 and 20°C).
      Step 1
      Melt your chocolate to around 40°C
      Step 2
      Lower the temp(to ± 31°C for dark chocolate or to ± 29°C for milk chocolate and white chocolate) and immediately add 5% Callets at ambient temperature.
      Step 3
      Stir the chocolate well to mix in the stable crystals of the Callets thoroughly and evenly. Do the Callets melt too quickly? That means your chocolate is still too hot. Add more Callets to lower its temperature and continue stirring.
      Step 4
      You’ll obtain a slightly thickened chocolate, which is ready and workable
      Let me know how this goes 🙂

      Hi Khitam you're very welcome! By maintaining the temperature to around 30degrees celcius and the quality of the callebaut adds to good fluidity. Store left over chocolate at room temperature and reheat slowly with lots of stirring to reuse.

      Hi Annie, your strawberries may be over ripe, or you could be soaking them or handling them too much, causing them to blemish and break down faster.

    this is just my recipe for chocolate covered strawberries :)
    wash and thoroughly dry fresh strawberries
    - melt desired type / amount of chocolate over a double boiler until smooth
    - dip using them stem to hold
    eat them all yourself or give them to your parents. (I chose the first option lol.)

    What are your bowls where you melt your chocolate called? And since I can’t purchase the chocolate you use here in the US what would be another alternative you suggest has similar quality to yours?

      Hi Nerissa, callebaut chocolate is available in the US and the links are in most of most of my video descriptions. I also recommend merckens for the compound if using the 50/50 method. Cheers

      @@ActressAyannaTene I found out the decor brand dont deliver outside Australia so I've changed to using Sistema brand bowls. They are on my latest video and included in link for the US and UK.

    how long do you let your strawberries dry before dipping them in chocolate please!

      Hey Zinnia it depends on the quantity of the order. They are fine to be washed and dried hours in advance, or just before dipping. Main thing is to get them dried and back into refigeration as soon as possible if not dipping straight away.

      Hi Rachel, thank you very much! The chocolate should be warmed to around 31 degrees C (87degreesF) and not higher than 34C / 93F

      Hi Christine thanks for letting me know about the template, I've already considered redoing it so it is more versatile for different sized boxes. The height is 4cm and I allow approximately 5cm squares for the berries if that helps a bit so you can make to size on the box you have. Cheers

      Hi there, sorry im not sure if i understand your question. Are you asking how long it takes to make the gift box? It depends, when making in bulk the average per box can be around 10-15min for experienced decorators, otherwise allow around 30min to an hour for beginners. Hope this helps 🙂

      @@PipeIt so it takes you 10 to 15 min to creat a box like that. And does that included making the box and drying the strawberries?

      @@running2gethere11 if i make 1 box on it own it will take longer but when making larger amounts yes, i can make 6+ boxes per hour including drying setting and gift boxing, provided the chocolate is ready and everything prepared.
