As soon as you mentioned 'Low Rider' I was back in my 1975 apartment playing my War album 'Why Can't We Be Friends ?' This dish looks so good, I can almost smell it! My only sadness is that halibut has become sooo expensive. It used to be my go to whitefish and now I can only have it for a special treat.😢
Was at a fish market in Lima and had this made fresh and it was to die for! Nothing like the Mexican ceviche I had been used to… and that leche de tiger, ugh, mouth is watering. Hopefully I can find some fresh halibut here in New Mexico lol
