I make sure that my starter has been fed and is quite active. I go through the folding process as shown in the video. However, the problem that I am having is that when you remove your loaf from the refrigerator, it is risen beautifully. My dough does not rise like that. What might be the reason that the dough does not rise as much. It does rise when baked, but not as much as yours.
Yes, you are right, it may depend on the temperature in the refrigerator and how long it takes for cold fermentation, but if your bread rises well during baking, that is good and it has the strength to rise. Also need to make sure that the dough doesn't ferment too much. 🙌Thanks for stopping by!🫶🏻
