My family is mexican and we take food verrrrrrrrry seriously 🤣🤣 I just wanted to say you KILLED it on this meal! I would not even have believed that was your first time making mexican rice if you hadnt mentioned it, and the tacos look amazing!!
PS: The pan was popping from the water droplets that were left on the side from rinsing it. when they touch the hot oil it pops!
Also, if you want to try corn tortillas they come out a little crispier instead of flaky like flour tortillas (obvi personal pref tho)
Also youre spot on about the rice just needs to go low and slower, adn you can even toast it in the oil for longer and slower to make it a little drier

It's poping because water was still in the pan when you added grease
I was looking for someone to say this before I commented the same thing! Oil and water don't like each other! That's usually how I tell if my grease is ready by dropping a few drops of water in!
