Totally agree … I gave up after my second attempt … stopping /starting just to be able to decipher what was being scripted… v v frustrating indeed. I just gave up due to eye-strain. Why is the speed so unbearably rapid?!! 😞
You can just wash them in running water, dry them, put in a sealed bag and then in the freezer. There is no need for all this at all. Just take out some time before use and they absolutely fine.

OMG Poonam ji you're giving me more ideas on what else that I can freeze! :p Already in my freezer: ginger-garlic paste, chilli paste, lemongrass, haldi leaves, pandan leaves, and some other leaves that I require in Malay cooking. Its true that good quality ingredients are not available all the time so sometimes we need to buy in bulk and proper storage will allow us to have it much later in the future. Great video!

We usually wash green chilies in collander. Dry out on newspaper overnight. Next day put it in a ziplog bag squeeze out air as much as possible and freeze it. It will last more than a year. You don't need to blend and freeze. Once I tried, after couple of months became tasteless.

You csn pickle, dehydrate, freeze, ferment any peppers. Im in California, grow many varieties (Indian, Thai, Mexican and one from Fiji) my own and preserve in several ways.

You are welcome Swarna. I always take out only the amount of paste/ whole chilies that I need at any point of time. If at all one were to keep it in refrigerator, then use paste within 3 days. This particular video is an old one. In recent years I have been storing them as very small cubes (one time use only). So the puree method is a bit wrong scientifically, capsaicinoids in the chilli are produced when you tear the placental region/internal membrane. It is basically a defense mechanism against plant predators. When you tear the chilli by pulverizing, it releases the capsaicin compounds, which have a half life of around 24 hrs. After 24 hrs the degradation sets and the production of these compounds can be slowed down by refrigeration but the taste and chemical concentration will both decrease. In my opinion grinding or tearing them won't be the best way to preserve them, although freezing and other methods seen above seem to be beneficial. Please try doing a taste test of all the aobev techniques to verify my claim and theory.
That's very nice ways to keep chilies. Next time you can try just wash and pat dry the fresh chilies and put in a ziplock freezer bag and freeze them. They don't stuck to each other and keeping the stems helps the chilies to stay fresh. They stay just perfect up until a year depending on the climate and your freezer . 😊 Hope you'll like it.
Can i know why do you soak the chili in water for half an hour? wont that make the chili harder to dry? and won't it make the chili not so spicy as it should be?
you seem to have really thought about this in considerable detail! congrats! i also do it in a similar way. but luckily fresh chillies are available throughout the year here. i need to store them because they don't sell less than 250 grams (1/4 kg). even then they frown as they weigh it up for you. so i generally buy 500 grams and end up having to use that for the next 5 or 6 days. i haven't had much success with coriander leaves and mint. the longest i can keep them is about 3 days max. curry leaves are more durable i might say. thumbs up and cheers!

At least in my area, it is difficult to buy good chillis. There availability is limited, and are very expensive. So that's why I buy, and store. I agree that I never faced this in India, so storing was never required.

Safina, first of all one must wash and dry the chillies before freezing. The frozen chillies will be soft when thawed, and not crisp like fresh chillies. Is that what you experienced? Please share what was bad about them.
Poonam's Kitchen I think I did it the wrong way, I didn’t remove the stems and I just was lazy and put them in freezer directly with stems attached. Maybe that’s why they turned all soft and mushy, so I threw them. This time I have done it the way you showed on yr video, so hopefully it will be fine. I will know when I take them out for using. I will surely post update then.🙂 But I have a question. In your video, you first freeze them in a plate with wrap on it for 2 hours, then you remove it and put it in ziplock bag and again freeze the same ones from the plate. Why do you do it twice like that? What is the purpose of doing it twice. Why not just freeze it directly in the ziplock from the beginning. I didn’t get the logic of this 2 step freezing. Safina, they will stick to each other if you freeze them directly in a ziploc. That is why I froze them separately and then put them together. The best way to use a frozen green chili is to use it frozen. You can easily cut a frozen chili. Please note, once thawed, they will definitely turn soft.

Lol, this is what people used to do when there were no refrigerators. They used to put everything in a mortar and make a paste of them along with some turmeric and salt. Just put the paste in a box and scoop out as much as u need
Wash them, let them dry, roll them up in paper towel and put them in zip lock bag. Or keep them in water container or glass and keep them in the fridge. Change water every 3-4 days

Spread cilantro leaves on a paper towel for some time (make sure they do not wilt), so that the excess moisture is absorbed. Discard the rotten/yellow stalks and leaves. Wrap the good ones in a fresh paper towel and store in a ziploc bag in the refrigerator.
Replied above, stick bunch in water glass, cover w plastic bag loosely and keep in fridge..stays fresh for 10 14 days...just change water every 2 3 days:) best way learnt on web

@@poonamskitchen yeah and I clean it before I use it to cook, and cut it up. Same thing. I'm not dead or sick yet from it 🤷🏽♀️ I mean, either way, it's being washed. The only thing I would take time to rinse and do all the extra work with would be cilantro, or something I'd have to cut up and fry first before freezing. Otherwise you can take the chilli peppers and just rinse them before cutting, which helps thaw it a bit too, and makes it easier for the tops to be pulled off. LOL xD
