In my opinion, as a Michelin star chef u took the wrong route. Instead of useless gold plating, u should have used high-end ingredients such as swap normal chicken for dragon chicken, swap normal rice for basmati or wild rice, build more complex flavors, etc.
I agree, there is a very fine line though when “changing ingredients” or using different produce to make something more “refined” without taking away the true context behind the dish. If id used wild rice or did ANYTHING out of the ordinary, i believe I would be hung drawn and quartered for doing so. I had to be very sensitive to cultural appropriation for this video, so i hope you can understand that! I was thinking of following up with a video on the different types of chicken mind, which of course have a large range in cost/price.
Make it more expensive by using premium ingredients, not gold leaf! I was hoping for something like specially bred raw Japanese-style chicken (delish) or some exclusie black rice crop. This is just bling.

The only way that could make one of the most expensive hainanese chicken rice is by adding unnecessary ingredients. For example, use all the rarest and expensive ingredient. Use deep sea water to wash ingredient and for soup. Instead of using ice cubes from refridgerator, use the most expensive ice cubes for the ice bath. Then for the soup, instead of using chicken bone, msg, add in the most expensive abalone, the most expensive sea cucumber, the most expensive lobster. I think i can easily make a £300-500 hainanese chicken rice.
If I buy a plane ticket to the UK + hotels + transportation, just to buy £38 Hainanese Chicken Rice. Then it will be for sure the most expensive dish ever to hit my own wallet.

Hmm... I suppose just applying gold leaf would make it more expensive, but are there ways to increase the price that also improve the flavor? Is there a "wagyu" of chicken? Are there other stupidly expensive ingredients that actually add flavor, like saffron?
I know it's tongue and cheek, but i feel like there's room to actually premium-ify this tastefully. White truffle, some sort of imported premium chicken, possibly caviar somewhere, a special cultivar of rice, etc. etc. If i had the time and budget I would definitely try something along those lines.
We always cook our own Hainan chicken rice, with our own yard chicken , slaughter and gut them.ourselves, and cook our own rice, chilli sauce , and everything.

Chef Elizabeth, the place that's charging 1450 Pounds for their special Steak Dish, is more than likely using Wagyu Beef. Because, there's NO WAY IN HELL that a steak covered in gold leaf would alone be 1450 Pounds.

You really get it, as evinced by your (I believe unique) innovation that the customer can add to amounts of favoured elements of a dish (sambal!) and remove others at the point of ordering. If you do get another place up and running, please consider adding Mee Udang and Mee Siam to the menu. Drool...
