    Seems like a thin flexible knife, like a western fillet knife, would work much better for this application. I wonder if they stick to this blade (Yanagiba?) for traditional reasons. The Japanese are probably the best in world with fish, so what do I know.

    beware of this school because they have 2 units in tokyo, in the shinjuku shop are japanese, in the one of foreign tsukiji, they charge double the amount for foreign students for half the study time.

      There is a reason why it is more expensive…
      it takes a translator for foreign class which alone makes it much more expensive… because Japanese ppl no so good at English… btw you cannot apply for shinjuku branch without knowledge of Japanese plus the criteria for passing exams are much higher…
