    My Nana used to make these when I was a kid. I never got her recipe before she passed. I could never get my tacos right....I was always missing something. You nailed it. Thanks Brother.....:). My mouth is watering!! I am making these tomorrow.

    Born and raised in NM. Family was originally from Socorro. I remember eating tacos like this but instead of the potato being mashed they were diced and cooked with the meat. As a child I remember not liking them, I only wanted all meat. Now as an adult I make them every once in a while. I do appreciate you stating NM cuisine was very simple. It is true, not a lot of spices used other than salt, pepper, and garlic powder. I have seen some recipes call for cumin, it is not traditionally used in NM cooking, Mexican yes, but not NM.

    Both sides of my Grandparents and my parents were born and raised in Albuquerque, New Mexico. My parents then moved here to California where I was born 83 years ago 👵🌝 Every year I buy Hatch

    I am a native New Mexican living in CA now but my Mom and both Grandmothers used to make these all the time. Loved them.

    I grew up in El Paso in the 1960's. And my mother always used left over mashed potatoes to make taco's. So more than New Mexico (although some people think El Paso is more New Mexican than Texas)

    I cannot wait to try these, as a kid growing up my mother always grated a potato into the taco meat, but this looks so much better! Thx for sharing your recipes 😀

    Can these be frozen? I'm dying to try them but I know we won't eat them all.

      They are still good after being refrigerated, but not frozen. The potatoes don't handle the freezing very well.
